Soft Dinner Rolls

Perfect for Christmas dinner, Sunday meals, or sopping up gravy.



Ingredients (makes 12–15 rolls)
• 1 cup warm water (110–115°F)
• ¼ cup sugar
• 2 ¼ tsp active dry yeast (1 packet)
• ¼ cup olive oil
• 1 egg
• 3–3½ cups all-purpose flour
• 1 tsp salt



Instructions
1. Activate yeast
• In a bowl, mix warm water + sugar.
• Sprinkle yeast on top and let sit 5–10 minutes until foamy.
2. Make dough
• Add olive oil, egg, and salt.
• Stir in flour, 1 cup at a time.
• When dough pulls together, turn onto floured surface and knead 6–8 minutes until smooth.
3. First rise
• Place dough in lightly oiled bowl.
• Cover and let rise 1 hour, or until doubled.
4. Shape
• Punch down dough.
• Divide into 12–15 balls.
• Place on greased baking sheet or in a 9×13.
5. Second rise
• Cover rolls and rise 30 minutes.
6. Bake
• Bake at 375°F for 12–15 minutes until golden.

Brown Gravy

Savory, silky, and packed with flavor. Make it in 10 minutes with pantry staples.

Ingredients
• 3 tbsp olive oil
• 3 tbsp flour
• 2 cups chicken broth (or veggie broth)
• 1 tsp soy sauce (adds depth + color)
• ½ tsp garlic powder
• ½ tsp onion powder
• ½ tsp dried thyme
• Salt & pepper to taste

Optional for richness:
• ½ tsp smoked paprika
• splash oat milk



Instructions
1. Heat olive oil in a saucepan over medium heat.
2. Whisk in flour → cook 1–2 minutes to make a golden roux.
3. Slowly whisk in broth until smooth.
4. Add soy sauce + seasonings.
5. Simmer 5–7 minutes, whisking occasionally until thickened.
6. Taste + adjust seasoning.

Warm Apple Cranberry Crisp

Sweet apples, tart cranberries, cinnamon spice, and a golden oat topping. Perfect with dairy-free ice cream or oat-milk whipped cream.

Ingredients

Filling:
• 4 cups sliced apples
• 1 cup fresh or frozen cranberries
• ¼ cup sugar or maple syrup
• 1 tsp cinnamon
• 1 tbsp flour (helps thicken)

Topping:
• 1 cup oats
• ½ cup flour
• ½ cup brown sugar
• ¼ cup vegan butter or coconut oil
• 1 tsp cinnamon
• Pinch of salt



Instructions
1. Preheat oven to 350°F.
2. Toss apples + cranberries with sugar, flour, and cinnamon. Spread into baking dish.
3. Mix topping ingredients until crumbly.
4. Sprinkle topping evenly over fruit.
5. Bake 35–40 minutes until fruit bubbles and topping is golden.

Brown Sugar Roasted Carrots with Fresh Herbs

Caramelized edges, tender centers, sweet holiday shine, and a pop of fresh herbs. Simple, beautiful, and always disappears first.

Ingredients
• 2 lb carrots, peeled & sliced lengthwise
• 3 tbsp olive oil
• 2 tbsp brown sugar
• 1 tbsp maple syrup
• 1 tsp garlic powder
• 1 tsp dried thyme (or 1 tbsp fresh)
• Salt & pepper
• Optional: chopped parsley for serving



Instructions
1. Preheat oven to 400°F.
2. Toss carrots with olive oil, brown sugar, maple syrup, garlic, thyme, salt & pepper.
3. Spread evenly on a baking sheet.
4. Roast 20–25 minutes, flipping once halfway through.
5. Finish with fresh parsley and a drizzle of maple if you like.

Savory Cranberry Herb Stuffed Chicken

Juicy chicken breasts stuffed with garlicky herb stuffing and studded with tart cranberry.

Ingredients
• 4 chicken breasts
• 2 tbsp olive oil
• 1 cup dairy-free stuffing mix or leftover stuffing
• ¼ cup dried cranberries
• 1 tbsp fresh parsley chopped (or 1 tsp dried)
• 1 tsp garlic powder
• ½ tsp onion powder
• Salt & pepper

Glaze:
• 2 tbsp maple syrup
• 2 tbsp Dijon mustard
• 1 tsp apple cider vinegar



Instructions
1. Preheat oven to 375°F.
2. Mix stuffing, cranberries, parsley, garlic, onion powder, salt & pepper.
3. Cut a pocket into each chicken breast and stuff the mixture inside.
4. Place chicken in a baking dish and brush with olive oil.
5. Whisk maple syrup, Dijon, and vinegar → brush over chicken.
6. Bake 25–30 minutes until internal temp hits 165°F.
7. Spoon pan juices over chicken before serving.

Maple Herb Roast Turkey Breast

Juicy, golden, lightly sweet from maple, and savory from fresh herbs. Perfect for a Christmas dinner that feels traditional but stays allergen-safe.

Ingredients
• 1 whole turkey breast
• 3 tbsp olive oil
• 3 tbsp maple syrup
• 2 tbsp Dijon mustard
• 4 cloves garlic, minced
• 1 tbsp chopped fresh rosemary
• 1 tbsp chopped fresh thyme
• 1 tsp smoked paprika
• Salt & pepper
• 1 cup chicken broth (for roasting pan)

Instructions:
1. Preheat oven to 350°F.
2. Pat turkey breast dry and place in roasting pan.
3. In a bowl, whisk olive oil, maple syrup, Dijon, garlic, herbs, paprika, salt & pepper.
4. Brush mixture all over turkey, getting under the skin if possible.
5. Pour chicken broth into the bottom of the roasting pan.
6. Roast uncovered 1 hour 45 min – 2 hours, basting once or twice.
7. Turkey is done when internal temp hits 165°F.
8. Rest 10–15 minutes before slicing.

Serving ideas:
• Serve with roasted carrots & potatoes in the same pan
• Pour the maple herb drippings over sliced turkey
• Pair with green beans, wild rice stuffing, or cranberry sauce

This keeps the Christmas traditional turkey flavor, but upgrades it with a maple-herb shine that feels festive without being sugary.

Rustic Chicken & White Bean Skillet

Ingredients:
• 2 cups cooked chicken, chopped
• 1 can white beans, drained
• 1 tbsp olive oil
• 2 cloves garlic, minced
• ½ tsp thyme
• ½ tsp rosemary
• Salt & pepper

Instructions
1. Heat olive oil in skillet.
2. Add garlic → cook 30 seconds.
3. Add chicken and beans.
4. Season with thyme, rosemary, salt & pepper.
5. Cook 6–8 minutes until warmed through.
6. Serve with crusty bread or rice.

Soy Glazed Salmon Bowls

Clean, flavorful, and fast — perfect for when you want something light but satisfying.

Ingredients
• 2 salmon fillets
• 2 tbsp olive oil
• 2 tbsp honey
• 2 tbsp soy sauce
• 1 tsp garlic powder
• Cooked rice
• Optional: green onions, sesame seeds

Instructions
1. Heat olive oil in a skillet.
2. Season salmon lightly with garlic powder.
3. Sear salmon 3–4 min per side.
4. Mix honey + soy sauce → pour into skillet.
5. Let glaze thicken for 1–2 min.
6. Serve over rice, drizzle extra sauce on top.

Creamy Tuscan Chicken

Ingredients
• 4 chicken thighs or breasts
• 2 tbsp olive oil
• 3 cloves garlic, minced
• ½ cup oat milk
• 2 tbsp mayo
• 1 tbsp Dijon mustard
• ½ tsp paprika
• ½ tsp Italian seasoning
• ½ cup sun-dried tomatoes
• Salt & pepper

Instructions
1. Heat olive oil in a skillet over medium-high.
2. Season chicken with salt, pepper, paprika.
3. Sear chicken 3–4 min per side, remove briefly.
4. Add garlic to pan → sauté 30 seconds.
5. Whisk oat milk, mayo, Dijon, Italian seasoning → pour in.
6. Add sun-dried tomatoes, return chicken.
7. Simmer 15–20 min until sauce thickens.
