🐟 Crispy Fried Catfish
πŸ“ Ingredients:

* 4 catfish fillets

* 1 cup buttermilk

* 1 cup cornmeal

* Β½ cup all-purpose flour

* 1 teaspoon paprika

* 1 teaspoon garlic powder

* 1 teaspoon onion powder

* Β½ teaspoon cayenne pepper (optional, for heat)

* Salt and black pepper (to taste)

* Vegetable oil (for frying)

* Lemon slices (for serving)

1. Marinate the fish

Place the catfish fillets in a bowl and cover with buttermilk. Let them soak for at least 30 minutes (this makes them tender and flavorful).

2. Prepare the coating

In another bowl, mix cornmeal, flour, paprika, garlic powder, onion powder, cayenne, salt, and pepper.

3. Coat the fillets

Remove the fish from the buttermilk, letting excess drip off. Dredge each fillet in the cornmeal mixture, pressing lightly so it sticks well.

4. Heat the oil

Heat vegetable oil in a deep pan to about 350Β°F (175Β°C).

5. Fry the catfish

Carefully place the fillets in the hot oil. Fry for 3–5 minutes per side, or until golden brown and crispy.

6. Drain and serve

Remove and place on paper towels to drain excess oil. Serve hot with lemon slices and your favorite dipping sauce.

My family didn't believe me until they tasted it - this meatloaf is a game-changer! πŸ§€πŸ”₯ Juicy, cheesy, and perfectly spiced, it's quickly become a dinner staple. Ingredients Used ⬇️ - Ground beef (1 lb) - JalapeΓ±os, sliced (2-3) - Cheddar cheese, shredded (1 cup) - Bread crumbs (1/2 cup) - Egg (1) - Chili sauce (1/2 cup) - Brown sugar (2 tbsp) - Garlic powder (1 tsp). THE TRICK ⬇️ 1️⃣ Mix ground beef, slices of jalapeΓ±os, and shredded cheddar in a bowl. 2️⃣ Add bread crumbs, egg, and garlic powder; combine well. 3️⃣ Form into a loaf and add extra cheddar in the center for a gooey heart. 4️⃣ Bake at 375Β°F (190Β°C) for 45 minutes. 5️⃣ Mix chili sauce and brown sugar, pour over the loaf, and bake for additional 10 minutes. My favorite way to make Brussels sprouts...marinated overnight! In a gallon size zip bag combine juice of 1 lemon, 1 T olive oil, pepper, paprika and garlic salt. Add in Brussels (cut in half or quartered), seal bag and toss around until well coated. Refrigerate overnight. When ready to roast, preheat oven to 400, place Brussels on baking sheet and bake for 15-20 minutes. Feel free to eat the entire pan, they are that good! πŸ’šπŸ’šπŸ’š

**French Onion Sausage Rolls**
**Ingredients :**
- 1kg pork mince
- 35g salt reduced French onion soup mix
- 1 tbsp tomato ketchup
- 2 tbsp Worcestershire sauce
- 2 tbsp Dijon mustard
- 3 sheets puff pastry, defrosted
- 1 egg
- 1 tbsp milk
**Method:**
1. Preheat oven to 200Β°C (392Β°F)
2. Prepare the filling**: In a large bowl, combine pork mince, French onion soup mix, tomato ketchup, Worcestershire sauce, and Dijon mustard. Season well with pepper.
3. Prepare the pastry : Cut each sheet of puff pastry in half. Place a portion of the pork mixture down the length of each half in a log shape.
4. Seal the rolls : Mix the egg and milk in a small bowl. Brush the mixture along the length of one side of the pastry with the mince mixture. Roll up the pastry and press to seal.
5. Brush with egg wash : Brush the top of each roll with the egg and milk mixture.
6. Cut into pieces : Use a small serrated knife to cut each log into 6 or 8 small pieces.
7. Bake : Transfer the rolls to a tray lined with baking paper. Bake for 20-25 minutes until golden and cooked through.

Salisbury Steak & Gravy Plate

Start by mixing ground beef with a little salt, pepper, and a splash of Worcestershire, then shape into thick oval patties. Sear them in a hot pan until browned on both sides, then set aside. In the same pan, cook sliced onions until soft, then stir in a little flour and pour in beef broth, letting it simmer into a rich, smooth gravy. Slide the patties back in and let them cook gently in the gravy until tender. On the side, mash boiled potatoes with butter and a splash of milk until creamy. Spoon the steaks and plenty of that thick gravy right over the mashed potatoes, then cut into one patty and watch the juices mix right into the mash.

Tonight’s dinner. So easy to make.

2-3 chicken breasts; cubed
3-5 small to medium potatoes
2 cans green beans(I used 1 1/2 cans)
1 pkg dry Italian dressing mix
1 melted stick of butter

Place chicken, potatoes and beans in pan. Then sprinkle Italian pack over everything then drizzle the butter over top. Cover with foil and bake at 350 for an hour and 10 minutes.

There were no leftovers.

Grandma’s Peach Cobbler

Ingredients:
2 cups fresh sliced or canned (drained) peaches
1 cup Bisquick All Purpose Mix
1 cup of milk
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 cup butter, melted
1 cup of sugar

Directions:
Preheat oven to 375 degrees F.
In an 8 x 8 baking dish, stir in Bisquick mix, milk, nutmeg and cinnamon together until mixed well. Stir in melted butter. In a medium mixing bow, stir sugar and peaches. Spoon over cobble crust. Bake for 1 hour or until crust is a golden brown. Serve warm and Enjoy! Great with a scoop of Vanilla Ice Cream too!
