Time to share one of my absolute favorite hobbies with y'all! It's vanilla extract!! I love making it, and vanilla sugar and salt.
There's so much misinformation out there about this little bean, and people get so up in arms about it. It's really a simple process, and the measurements and amount of time definitely matter!
True extract has a depth of flavor, it has vanillan crystals and oils in it, and there's truly nothing like it!
To make good quality extract, you need one ounce of beans, YES, you have to weigh them!! To one cup of liquor, 80-100 proof, light or dark doesn't matter, but it DOES change your extracting time. Clear liquor takes a year, dark liquor takes two. Store it in a cool and dark place while it brews, and no, you don't have to shake it up. It also never goes bad as long as you remove the beans after they get uncovered from using your extract. I put all my used beans into one big jar of white rum and let them brew and brew until it looks good. That's called a mother jar of vanilla, you mix everything up and see what you get!
