On a day like today, I’m reminded of the ingenious ways that indigenous peoples thrived through tough winter climates like the one I’m in. By no means am I comparing what I’m doing to those. What I am saying is there is a lot to learn from communities that were more connected to their surroundings. I’m grateful for many things, one of them is the art of preservation. With such a short growing season, it’s important to consider ways to extend your harvest. Three ways I am making sure to feed my loved ones well into the winter are as follows:

1. Taking any extra tomatillos, green tomatoes, onions chiles, garlic and cilantro are making and canning salsa. Favorite thing to make with this is chilaquiles.

2. Taking all of my herbs like basil, parsley, and even green onions to make a pesto. Great for making your pasta nice and tasty.

3. Turning our apples into applesauce and canning them. An amazing and healthy snack you can eat completely by itself.

I want to reiterate that these are not the same strategies or techniques that indigenous tribes used to preserve foods like nuts, berries and dried meats, but the fact that we can utilize natural resources in a way that will fuel us long after they are gone enhances our connection and understanding of the works around us.
