🌱 Tofu Fajitas side of chopped kale & cucumber salad, pickled jalapeño & carrots 🌱
Another easy delicious lunch recipe from Planta by Gia!
Makes 3 servings total with my notes 😁
INGREDIENTS
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon garlic powder
1 teaspoon salt
1@ red, yellow,orange bell pepper, sliced
3 jalapeños, sliced - I just had a pickled one on side
8 ounces cremini mushrooms, sliced
1 yellow onion, cut into wedges
1 16-ounce block super firm tofu*, cubed
1 tablespoons EVOO or avocado oil
1/2 bunch fresh cilantro, chopped
1 lime, sliced
Avocado
Unsweetened dairy free yogurt - I had Kite Hill Non-dairy Greek unsweetened vanilla yogurt open - I used it, it worked 🤷♀️ I'll use plain next time
8–12 corn tortillas or rice
Heat oven to 425F (218C )
Mix spices in small bowl
Use parchment paper on large baking sheet
Place all veggies, cubed tofu, then sprinkle spices over, then drizzle with oil. Toss.
Bake about 20min, toss & bake another 15min till done.
Warm up tortillas, add avocado, tofu, veggies garnish with cilantro, non-dairy yogurt, lime, salsa.
I had with a big side salad of kale, cucumbers, simply dressed with Balsamic vinegar, lime, and Tajin 🌶
