🌱 Tofu Fajitas side of chopped kale & cucumber salad, pickled jalapeño & carrots 🌱
Another easy delicious lunch recipe from Planta by Gia!

Makes 3 servings total with my notes 😁
INGREDIENTS
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon garlic powder
1 teaspoon salt
1@ red, yellow,orange bell pepper, sliced
3 jalapeños, sliced - I just had a pickled one on side
8 ounces cremini mushrooms, sliced
1 yellow onion, cut into wedges
1 16-ounce block super firm tofu*, cubed
1 tablespoons EVOO or avocado oil
1/2 bunch fresh cilantro, chopped
1 lime, sliced
Avocado
Unsweetened dairy free yogurt - I had Kite Hill Non-dairy Greek unsweetened vanilla yogurt open - I used it, it worked 🤷‍♀️ I'll use plain next time
8–12 corn tortillas or rice

Heat oven to 425F (218C )
Mix spices in small bowl
Use parchment paper on large baking sheet
Place all veggies, cubed tofu, then sprinkle spices over, then drizzle with oil. Toss.
Bake about 20min, toss & bake another 15min till done.
Warm up tortillas, add avocado, tofu, veggies garnish with cilantro, non-dairy yogurt, lime, salsa.

I had with a big side salad of kale, cucumbers, simply dressed with Balsamic vinegar, lime, and Tajin 🌶

Mom & I enjoy our Non-dairy chocolate desserts, and this fantastic! Easy, budget friendly, delicious! We're going to freeze next time to make "nice cream".

Silken Tofu Chocolate Mousse
Serves 1 (I doubled for both of us)
2 oz Silken or soft organic tofu
1/2 frozen ripe banana (we keep in freezer chopped)
1/2 Tbsp Maple syrup
1 Tbsp 100% Organic Unsweetened Cacao powder
1 Tbsp PB2 powder (optional)

Blend until smooth. Enjoy!

There were 4 mango biscoff cookies, but I had to "quality control" one for the road Friday night 😁

And yes there were 3 giant Taquitos... ya'll I have been craving these since December!! Just ask for veganize version (no cheese) yet so good!!
The Aqua Fresca choices are great, yet cucumber & line is my fave. They have Pani Puri filled with vegetable curry, no pic, because...oh well. Lol 😆

After a busy 2 days as a vendor, I wanted easy super comfort food, full of protein, fiber, and delicious of course!

"Reese PB Cup" Oatmeal was born!
What's in the mug:
1/4 cup whole organic oats (2.5g protein, 2g fiber)
2 Tbsp PB2 powder (6g protein, 1g fiber)
2 Tbsp Chia seeds (3g protein, 6g fiber)
1 Tbsp Ground Flaxseed (1.5g protein, 1.5g fiber)
1 Tbsp H**p Hearts (3g protein,.5g fiber)
1 Tbsp sugar free dark chocolate chips
1 cup organic unsweetened soy milk (8g protein ,1g fiber)
Stir to mix, microwave for 2-3 minutes minutes
Topped with chocolate chips, peanut butter, oats
Let sit to thicken

Macros 24g protein, 12g fiber

🌱Vegan Carne Asada 🌱Recipe adapted from
Ingredients
150g Soy Curls
1/2 cube Not-Beef bouillon cube
1 tsp Sh*take mushroom powder
1 tsp beet powder
Hot water to cover
Soak & Rehydrate Curls, squeeze out excess moisture
Make Marinade
1/2 cup Orange juice
1/2 cup Lime juice
1/2 cup Liquid Aminos (Tamari, or Soy sauce)
3 Tbsp EVOO
1/2 c cilantro stems, finely chopped
6 cloves garlic, crushed
1 tsp chili powder
1/2 tsp cumin powder
1 Tbsp Adobo sauce (from Chipotle peppers)
Add Soy curls to marinade, let sit 10-15 min, then cook on medium heat, reducing liquid.
🌱Vegan Nacho Cheeze Dip 🌱
In large pot, cube with water
1 cup raw cashews
1/2 cup peeled & chopped carrots
1/2 cup peeled & chopped yellow potatoes
Boil 5-10 minutes until all is tender
Drain, let cool, then add to high speed blender
Add Seasoning
2 Tbsp Nutritional Yeast
2 Tbsp lemon juice
1 garlic clove
1 tsp salt
3/4 tsp chili powder
1/2 tsp onion powder
2/3 cup water
Optional- 1-2 tsp tapioca starch (makes thicker)
Optional- 2 Tbsp jalapeños & juice
Blend until smooth, heat & eat!
🌱Quick pickled red onions🌱Recipe from
Boil 1 cup water + 1 cup vinegar
1 Tbsp salt,2 Tbsp sugar
Add & dissolve salt & sugar
Pour over tightly packed red onions in glass jar.
Seal & let cool. Let sit in refrig until chilled

Big Breakfast Sunday!
What's on the plate
🌱🥚Mung Bean egg souffle cups (recipe below, I double batch & freeze for later)
🥔Steamed yellow potato
🌱Pura Vida Fire Roasted Primavera Mistura vegetables (mix of fire-roasted vegetables featuring red bell pepper, zucchini, yellow squash, red onions, broccoli, avocado oil garlic powder, onion powder, Himalayan pink salt, and black pepper)
🌱🌶 All topped with crushed red pepper flakes
🌱🧀 Rebel Cheese Plant-based Mozzarella, shredded (Cashew & coconut based)

How many plants to start my day?! 13 💚

🌱🥚💚Mung Bean "Egg" from
With my notes
6 servings
1 cup split yellow mung beans/moong dal/yellow lentils, soaked overnight (I left mine soak longer)
1 cup unsweetened soy milk (added protein)
1 tsp black salt or Kala Namak
½ tsp salt - I omitted due to Kala Namak
2 tbsp olive oil - I used just 1 tsp EVOO, and non-stick ceramic pan
½ tsp turmeric
½ tsp garlic powder
½ tsp onion powder
1 ¼ tsp baking powder
3 tbsp nutritional yeast
1 tsp tapioca starch, optional - I added
pepper to taste
paprika, to serve - I omitted

1. Drain mung beans after soaking
2. Put all ingredients in high speed blender
3. Blend until smooth, then add to heated non-stick pan, stir, cover for 1-2 minutes.
4. Stir again, cover, until desired consistency, & "sets"
5. I then use lightly oiled muffin tins to portion out to freeze for later.
6. To warm up, either microwave or on stove.

Note: you can add veggies, plant-based cheeze or meats, have fun!

My breakfast took about 10 minutes to prep & warm up to eat! 🥰💚
