Spinach Garlic Meatballs Stuffed with Mozzarella
These juicy Spinach Garlic Meatballs are packed with fresh spinach, savory garlic, and a gooey mozzarella center. Baked until golden and served with marinara sauce, they make a delicious family dinner, appetizer, or meal-prep favorite.
Ingredients
1 lb ground beef, turkey, or a combination
1½ cups fresh baby spinach, finely chopped
3 cloves garlic, minced
1 large egg
½ cup breadcrumbs (or almond flour for a low-carb option)
½ cup grated Parmesan cheese
1 cup mozzarella cheese, cut into small cubes
1 teaspoon dried oregano
Salt and black pepper, to taste
1 tablespoon extra virgin olive oil
1 cup marinara sauce (optional)
Extra shredded mozzarella for topping (optional)
Instructions
Prepare the Meatball Mixture
In a large mixing bowl, combine the ground meat, chopped spinach, garlic, egg, breadcrumbs, Parmesan cheese, oregano, salt, and pepper.
Mix until everything is evenly incorporated, being careful not to overwork the meat.
Stuff the Meatballs
Scoop about 2 tablespoons of the mixture and flatten it slightly in your hand.
Place a cube of mozzarella in the center and wrap the meat around it, sealing completely.
Roll into a ball and repeat with the remaining mixture.
Cook the Meatballs
Preheat the oven to 400°F (200°C).
Lightly grease a baking dish or baking sheet with olive oil.
Arrange the meatballs evenly and bake for 18–22 minutes, or until fully cooked and lightly browned.
Add Sauce and Cheese
If using marinara sauce, pour it over the baked meatballs.
Sprinkle with additional shredded mozzarella cheese.
Return to the oven for 5 minutes, or until the cheese is melted and bubbly.
Serve
Garnish with extra Parmesan cheese and fresh parsley if desired.
Serve hot with pasta, garlic bread, zucchini noodles, or a fresh salad.
