🧀 Creamy Garlic Parmesan Chicken & Broccoli 🥦
This recipe takes the classic combo and dials up the flavor with a rich, savory sauce and a little kick!
Ingredients:
1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
1 large head of broccoli, cut into florets
2 tbsp olive oil
3 cloves garlic, minced
1 small onion, diced
1 cup heavy cream (or half-and-half for a lighter version)
1/2 cup grated Parmesan cheese
Our Twist! -> 1/4 cup sun-dried tomatoes, chopped (for a pop of sweet and tangy flavor!)
Our Twist! -> 1/2 tsp red pepper flakes (optional, for a gentle kick of heat)
1 tsp Italian seasoning
Salt and freshly ground black pepper to taste
Fresh parsley, chopped (for garnish)
Instructions:
Sauté Chicken: In a large skillet over medium-high heat, add olive oil. Add the chicken pieces, season with salt, pepper, and Italian seasoning. Cook until golden brown and cooked through. Remove the chicken and set aside.
Cook Veggies: In the same skillet, add the diced onion and cook until softened (about 2-3 minutes). Add the broccoli florets and cook until they are bright green and crisp-tender (about 5-7 minutes). Add the minced garlic and cook for another minute until fragrant.
Make the Dreamy Sauce: Reduce the heat to low. Pour in the heavy cream and stir, scraping up any delicious browned bits from the bottom of the pan. Stir in the Parmesan cheese until it's melted and the sauce is smooth.
Combine & Conquer: Add the cooked chicken back to the skillet. Stir in the chopped sun-dried tomatoes and red pepper flakes (if using). Let it all simmer together for a couple of minutes for the flavors to meld.
Serve it Up! Garnish with fresh parsley. This is amazing on its own, or you can serve it over pasta, rice, or quinoa. Enjoy the cheesy, garlicky perfection! 🤤
