Rustic Beef Stroganoff with Egg Noodles
Ingredients:
- 1 lb beef sirloin, thinly sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 8 oz cremini mushrooms, sliced
- 2 tbsp butter
- 1 tbsp olive oil
- 2 tbsp all-purpose flour
- 1 cup beef broth
- 1 cup sour cream
- 1 tsp Dijon mustard
- Salt and pepper to taste
- 8 oz egg noodles, cooked according to package instructions
- Fresh parsley, chopped (for garnish)
Directions:
1. In a large skillet, heat the olive oil over medium-high heat. Add the sliced beef and cook until browned on all sides. Remove the beef from the skillet and set aside.
2. In the same skillet, melt the butter over medium heat. Add the diced onion and garlic, sauté until softened and fragrant.
3. Add the sliced mushrooms to the skillet and cook until they release their juices and start to brown.
4. Sprinkle the flour over the mushroom mixture, stirring well to coat. Cook for a minute to get rid of the raw flour taste.
5. Slowly pour in the beef broth while stirring constantly to avoid lumps. Bring the mixture to a simmer and cook until it thickens.
6. Return the cooked beef to the skillet. Stir in the sour cream and Dijon mustard. Season with salt and pepper to taste. Simmer gently for a few minutes to allow the flavors to meld.
7. Serve the rustic beef stroganoff over cooked egg noodles. Garnish with chopped fresh parsley for a pop of color and added freshness.
