This Stuffed Mediterranean Salmon is perfect for a delicious dinner that looks fancy but only takes 30 minutes and one dish to make. It's really easy to prepare! Here’s what you’ll need: 🐟 Salmon * 4 salmon fillets (6 oz / 170g each), center cut * 1 tablespoon olive oil * ¾ teaspoon salt * ½ teaspoon black pepper 🥬 Stuffing * ¼ cup (60g) Greek yogurt * 5 oz (140g) frozen chopped spinach, thawed and well-drained * ¼ cup (40g) sun-dried tomatoes, drained and julienned * 2 tablespoons Kalamata olives, pitted and chopped * 2 green onions, finely chopped * 2 garlic cloves, minced * ½ teaspoon dried dill * Zest and juice of 1 lemon 🔢 Instructions: 1. 🔥 Preheat your oven to 400°F (200°C). Lightly spray a 9x13 baking dish with olive oil. 2. Pat each salmon fillet dry. Cut a horizontal slit into the thickest part of each fillet to create a deep pocket, but don't cut all the way through. 3. 🧂 Season the salmon with salt and pepper, inside and out. 4. 🥬 In a bowl, combine the Greek yogurt, spinach, sun-dried tomatoes, Kalamata olives, green onions, garlic, dried dill, and lemon zest. Mix until everything is combined. 5. Spoon the filling generously into each salmon pocket. Gently press it in and secure with one or two toothpicks. 6. 🔥 Place the salmon in the baking dish. Bake uncovered for 10 minutes, until the salmon is light pink and the filling is heated. 7. Switch to broil for an additional 2 minutes, until the top is lightly caramelized. 8. 🍋 Remove from the oven immediately.
