π°π Blueberry Cream Layer Cake β Soft, Dreamy & Full of Berry Bliss! π
π Ingredients (Serves 10β12)
For the cake:
2 cups all-purpose flour
1Β½ tsp baking powder
Β½ tsp baking soda
ΒΌ tsp salt
1 cup sugar
Β½ cup unsalted butter, softened
3 large eggs
1 cup milk
2 tsp vanilla extract
For the cream filling:
2 cups heavy whipping cream
1 cup cream cheese
Β½ cup powdered sugar
1 tsp vanilla extract
For the blueberry layer:
1Β½ cups fresh or frozen blueberries π«
2 tbsp sugar
1 tbsp lemon juice
1 tsp cornstarch (optional, for thickness)
For topping:

1. Preheat oven to 350Β°F (175Β°C). Grease and line two 8-inch round pans.
2. Make the cake batter: Cream butter and sugar together until fluffy. Add eggs one at a time, then mix in vanilla.
3. In another bowl, whisk flour, baking powder, baking soda, and salt. Alternate adding the dry ingredients and milk to the butter mix.
4. Bake for 25β30 minutes until golden and springy. Cool completely before assembling.
5. Make the blueberry filling: In a saucepan, heat blueberries, sugar, and lemon juice over medium heat until thick and jammy. Let it cool.
6. Whip the cream layer: Beat heavy cream, cream cheese, powdered sugar, and vanilla until smooth and fluffy.
7. Assemble the magic:
Place one cake layer, spread blueberry filling, then add a layer of cream.
Repeat with the next layer, finishing with cream on top.
8. Decorate: Top with fresh blueberries and green leaves for a classy touch.
