Seafood Delight
1. Grilled Salmon with Lemon-Dill Sauce
2. Fish Tacos (with Cod or Tilapia)
3. New England Baked Haddock
4. Blackened Catfish

1. Grilled Salmon with Lemon-Dill Sauce

Ingredients:

4 salmon fillets

2 tbsp olive oil

Salt & pepper

Juice of 1 lemon

Fresh dill, chopped

1/2 cup Greek yogurt

Instructions:

Season salmon with salt, pepper, and a drizzle of olive oil.

Grill for 4–5 minutes per side.

Mix yogurt, lemon juice, and dill for the sauce.

Serve salmon topped with the sauce.

2. Fish Tacos (with Cod or Tilapia)

Ingredients:

1 lb cod or tilapia, cut into strips

1 tsp chili powder, ½ tsp paprika, salt

2 tbsp olive oil

Corn tortillas

Slaw (cabbage, lime juice, sour cream)

Instructions:

Season and pan-fry fish in olive oil until golden.

🍰 No-Bake Mango Cheesecake
✅ Ingredients
🧈 For the crust:
200g (about 2 cups) digestive biscuits or graham crackers, crushed

100g (½ cup) unsalted butter, melted

🍰 For the cheesecake layer:
400g (14 oz) cream cheese, room temperature

200ml (¾ cup + 2 tbsp) heavy cream

100g (½ cup) granulated sugar

1 tsp vanilla extract

2 tbsp lemon juice

2½ tsp gelatin + 3 tbsp warm water (or agar-agar as alternative)

🥭 For the mango jelly topping:
200ml (¾ cup) mango puree (fresh or canned)

1½ tsp gelatin + 2 tbsp warm water

Optional: a little sugar or lemon juice to adjust taste

🍓 For garnish:
Fresh mango cubes

Raspberries, blackberries, red currants, mint leaves

🥣 Instructions
1. Make the crust:
Mix crushed biscuits and melted butter until evenly combined.

Press into the bottom of a springform pan (20 cm / 8 inch).

Refrigerate for 20 minutes.

2. Prepare the cheesecake filling:
Dissolve gelatin in warm water. Let it bloom for 5 minutes.

In a bowl, beat cream cheese, sugar, lemon juice, and vanilla until smooth.

In another bowl, whip the heavy cream until soft peaks form.

Gently fold the whipped cream into the cream cheese mixture.

Stir in the dissolved gelatin.

Pour the filling over the chilled crust and smooth the top.

Refrigerate for at least 4–6 hours, or until set.

3. Make the mango topping:
Dissolve gelatin in warm water and mix with mango puree.

Gently pour over the set cheesecake layer.

Chill for another 2–3 hours until firm.

4. Decorate and serve:
Top with diced mangoes, fresh berries, and mint.

Carefully release from the springform pan, slice, and enjoy!

120 g almond flour
40 g ground pistachios (unsalted, finely ground)
2 tbsp powdered sugar
½ tsp salt
60 g melted butter
½ tsp vanilla extract
For the Lemon Filling
150 ml fresh lemon juice (about 3–4 lemons)
Zest of 2 lemons
150 g granulated sugar
3 large eggs
1 egg yolk
100 g unsalted butter, cubed
Pinch of salt
Optional Garnish
Crushed pistachios
Lemon zest or thin lemon slices
Edible flowers
Instructions
A golden crust meets a silky, tangy curd that sets like a dream—each slice cuts clean and gleams in the light.
🥧 Make the Crust:
Preheat oven to 175°C (350°F). Mix almond flour, pistachios, sugar, and salt. Stir in melted butter and vanilla until evenly moistened. Press into a tart pan (20–23 cm). Chill for 10 minutes.
🔥 Bake the Crust:
Bake for 12–14 minutes or until lightly golden. Let cool while you prepare the filling.
🍋 Cook the Lemon Curd:
In a saucepan, whisk lemon juice, zest, sugar, eggs, yolk, and salt. Cook over medium heat, stirring constantly, until thickened (about 8 minutes). Remove from heat, whisk in butter until smooth.
🌿 Assemble & Chill:
Pour curd into the cooled crust. Smooth the top and refrigerate for at least 2 hours or until fully set.
