Build The Pudding Fluff
1. Melt the butter in a skillet over medium heat. Add the sliced bananas, honey, brown sugar, vanilla, cinnamon, and sea salt.
2. Cook gently for 2–3 minutes, turning once, until the bananas are golden and coated in a glossy honey caramel. Cool completely.
3. Toss the bread cubes with melted butter, honey, brown sugar, cinnamon, vanilla, pecans, and sea salt.
4. Toast in a skillet for 4–5 minutes, stirring gently, until the bread becomes golden and crisp around the edges. Cool completely.
5. Blend the cottage cheese until completely smooth.
6. Beat together the cottage cheese, Greek yogurt, softened cream cheese, one ripe banana, honey, vanilla, cinnamon, and salt until thick and silky.
7. Fold in the whipped topping until airy and fluffy. Gently ripple most of the caramelized bananas through the cream.
8. Refrigerate for 2 hours, then layer with the remaining honey bananas and plenty of cinnamon honey toast crunch immediately before serving.
