These Pumpkin Spice Oatmeal Cream Pies are basically Fall in dessert form. Chewy, spiced, and stuffed with a filling you'll want to eat by the spoonful. This recipe from Stefany.bare is the perfect way to kick off the Autumn baking season! To make the cookies:
Combine 2 1/2 cups old-fashioned oats • 11/2 cups flour • 1 tsp baking soda • pinch of salt • 11/2 tsp pumpkin spice • 1 1/2 tsp cinnamon
•set aside and cream together 2 sticks butter, softened• 1/2 cup brown sugar • 1 cup sugar then add in 1 cup pumpkin puree • 1 egg yolk • 1 tsp vanilla once blended slowly add in the dry ingredients until well combined.
Scoop the dough in 2 tablespoons balls onto a parchment lined cookie sheet and bake at 350 for 15 minutes. For the filling: Beat together 8 oz softened cream cheese, 4 Tablespoons softened butter • 1 1/4
cup powdered sugar • 1/2 tsp vanilla • 1 tsp pumpkin pie spice

This is my 3rd time making Your Barefoot Neighbor amazing Chicken Cobbler and it just gets better every time! I cut the chicken broth down by just a half a cup and increased the oven temperature to 375 because l started with a cold rotisserie chicken and I didn't want to increase the baking time and it worked out perfect. Here's how I made mine: melt a stick of butter in a 9x13 baking dish, add the meat from one rotisserie chicken, deboned and shredded, 1 package of frozen peas and carrots (or the vegetable of your choice) season to taste, I used black pepper and some kinders roast chicken seasoning, then in a mixing bowl combined one package of Red Lobster Cheddar Bay Biscuit Mix, including the seasoning packet and 2 cups milk, blend well then pour over your chicken and vegetables but do not mix it! Then in the same mixing bowl, combine a can of cream of chicken soup and 1 1/2 cups chicken broth and pour on top of everything else but once again, don't mix it. Bake at 375 for 1 hour and 10 minutes.

We had some left over pulled pork so we made one of our favorite hot sandwiches for dinner - the Cuban. The sandwich is a flavorful combination of Swiss cheese, shredded pork, sliced ham and dill pickles piled into Cuban bread that's been slathered with yellow mustard. The whole sandwich is then pressed while grilling. Since I don't own a Panini Press (that would have been a lot easier! ) I placed a cast iron skillet and mini Dutch oven on top of mine which worked beautifully
My husband dipped
his sandwich in some Mojo Criollo sauce but I enjoyed mine with all those bold flavors and crispy crunchy exterior just as it was.

I love some sauted mushrooms on my steak! I sliced up some Baby Bella mushrooms and threw them into a skillet with 2 tablespoons of butter, seasoned with all purpose seasoning, vegetable seasoning and fresh ground pepper. When the mushrooms were almost done I added in a splash of Marsala cooking w**e (1/4 cup) and let it cook off for about 5 minutes more.

Makes the best tasting scones around: I've made them with raspberries and also blueberries and they are so incredibly light and ful of flavor! My scone making skills aren't the best so they weren't the prettiest but they certainly tasted great - I'll be making more. Here are the ingredients:
2cups flour• 1/3 cup sugar •1/4 tsp baking soda• 2tsp baking powder•1/2 tsp salt •1/2 cup frozen butter •1/3 cup each plain Greek yogurt and heavy whipping cream•1 egg • 1tsp vanilla extract•1 cup raspberries, GLAZE 1 cup powdered sugar mixed with 1-2 tablespoons

Dinner tonight was quick, super easy and oh so filling. Some sliced smoked sausage browned in the skillet and two cans of Blue Runner Creole Red Beans reheated with just a little water. We had our sausage and beans with rice and a little green onion garnish. It definitely hit the spot after this busy day!

Remembering Dolly Parton and all the amazing good things she shared with us all - including some delicious recipes. ❤️ This southern comfort food breakfast favorite starts out with Dolly Parton's milk gravy recipe which is available on a lot of websites, (I found it on tasteofhome.com) I added ground sausage and of course we are putting it on hot buttermilk biscuits: 1/3 cup flour • 2 1/2 cups milk • 1/2 cup heavy whipping cream • 1/4 tsp salt • 1/4 tsp ground Thyme • 1/4 tsp to 1/2 tsp black pepper. Mix all ingredients together with a whisk and add to skillet with cooked sausage and simmer until smooth and thick.

This 5 ingredient casserole is so good, I had to share it one more time while all this great summer squash is in season! It is as simple as dicing up yellow squash, onions and kiabalsa sausage ( or smoked sausage would also work) and layering it with shredded cheddar cheese and bread crumbs in a casserole dish and baking it for 45-55 minutes in a 350 degree oven. You can decide how much of each ingredient to use based on how many people you are feeding. It taste amazing and couldn't be easier to make!
