°o° ⋆✴︎ ̊ My Disneyland gluten-free dining guide is one of the most popular things I’ve ever shared online… but it’s also about 10 years old. 😳

A lot has changed since then, so I’m starting the reporting all over again.

Here’s a few of our favorites in DCA - gluten-friendly jam filled sugar cookies, teriyaki chicken bowls, birria tacos, carne asada tacos, Mickey bars, and my afternoon pick me up - a dairy-free iced latte and fruit. 🍇🍊

📍Saving all of the best finds for an updated guide, but here’s a peek at everything we ate during one day in the parks. I’ll share our faves from Disneyland next time.

There’s a reason my audience nicknamed this one
Magic Meatball Pasta.🍝 💫

Everything cooks together in one pot, and somehow it feels like the comfort food many of us grew up loving.

Sauté 2 pounds frozen meatballs in 2 tablespoons olive oil in an Instant Pot. Scatter 24 ounces grain-free fusilli over the top. Whisk together 1 (32-ounce) jar marinara sauce, 2 teaspoons Italian seasoning, and 1 teaspoon salt, then spoon it over the pasta. Pour 4 cups chicken broth over everything (don’t stir), cook on High Pressure for 4 minutes, then quick release. Stir gently until the sauce thickens and coats the pasta. If needed, let it sit on Warm for a few minutes before serving. Top with Parmesan and parsley, if desired.

20 years ago, I taught myself how to bake grain-free & dairy-free because I didn’t have another option.

Today, after 24 months of developing, testing, refining, and retesting recipes, 73,287 words, and more batches than I could ever count, I officially turned in my 7th book.

I’m sitting in my kitchen feeling all the feelings.

I’m equal parts relieved, proud, grateful, exhausted, and emotional.

This book challenged me more than any project I’ve ever taken on, but I truly believe it’s the baking book I needed when I started this journey all those years ago.

See you in Fall 2027, friends. Your kitchens are about to smell really, really good.

Mayhem is almost over and I’m officially unwell.
At this point I’ve attended approximately:
369 baseball games ⚾️
1,439 school events 👩‍🏫
and spent 94% of my life in the car 🚗
So naturally I’ve started naming dinners after baseball plays.
“Double Play Beef & Broccoli” just hit your email.
6 hours on low

Honestly though, this whole Double Header Dinner Series was born out of survival mode for sports-parent season and Mayhem. Real dinners you can prep before the chaos starts and come home to after games, practices, concerts, and whatever random theme day your kid forgot to mention
until 10pm.

Removing salmon skin is so annoying… Until you do this.
I’ve used this trick for years and still feels ridiculously satisfying every time.

Just place your salmon fillet skin side up on a cooling rack, set over a rim, baking sheet, pour some boiling water over the skin side for about 10 seconds and the skin peels right off. Especially helpful for salmon, salads, bowls, patties, casseroles, or meal prep when you don’t wanna wrestle with a knife.

All the foods we eat !
has gluten-free hot dogs and buns (not just ordered without a bun! 🌭), and chips, plus we always get the Cardiff Crack without the bun. Easton loves the Crack Nachos. The Kale, mango, blueberry almond salad is my fave, but if they have the broccoli salad I usually get half and half.
And has nearly all gf items too!
My order: Kale Mango Salad with a side of Cardiff Crack that I put on top of the salad. 🥗 💥

High protein gets all the attention lately, but most people still aren’t eating enough fiber.

When I build meals, I try to focus on BOTH because that combo keeps me fuller longer, supports digestion and energy, and helps me avoid the constant snack cycle.

These are some of the real meals I’ve been making lately with around 25–50g protein plus fiber from things like sweet potatoes, kale, broccoli, avocado, seeds, berries, and beans. Also. Regularity. 😉

What was your order growing up for Chinese takeout?
Mine was Beef & Broccoli. My sisters was Sweet and Sour Pork. Both are getting Double Header Dinner treatment in my new series with slow cooker modifications! First up - this play on the sweet and sour flavors of her favorite - but without any added sugar. Meatballs, pineapple, bell peppers, and a tangy sweet sauce. Thrown together in 10 minutes, then the slow cooker does the work. Full series is within my email list!
