Here's a reminder that sometimes the least convenient option is the better choice!
We needed bone-in, skin-on chicken thighs for supper tonight, which were proving impossible to find. My options were a four-count of boneless, skinless thighs or a jumbo pack of leg quarters for the same price. I decided to go with the leg quarters!

When I got home, my husband separated the thighs from the legs. Yes, it took a little bit of work, but now we have the exact meat we need for tonight's supper, plus an extra pack of thighs and two packs of legs in the freezer for later.
A little bit of extra effort turned one dinner run into four meals' worth of food!

Do you prefer buying bulk cuts and prepping them yourself, or paying for the convenience?

I know I have never posted about a celebrity before, but I genuinely feel like Dolly is the exception!

I have always admired Dolly Parton for as long as I can remember! She taught us that kindness is always the answer, to always fight for your dreams, love with your whole heart, lift others up, and always be true to who you are!

She brought such amazing things into the world through her music, generosity, and charity work. There's no doubt she made the world a better and kinder place. She will absolutely be missed. 🤍

Let's all try to be a little more like Dolly! May she rest in peace. ✨

My sister in law made this for the whole family when we were on vacation and I needed the recipe! This was our first time making it since then and it will be part of our rotation!

This was a one skillet almost set it and forget it!

- Chopped onion and 1 lb of ground beef with some taco seasonings in a skillet
- Add diced tomatoes, beans, one cup of rice and 2.5 cups of water
- Mix and bring to a boil
- Reduce heat to a simmer, cover and let it be for about 25 minutes, stirring occasionally
- once the liquid is gone, it's good to go!

Top it off with your favorite taco fixings!

After working ALL DAY (and getting well over 15,000 steps), I'm so tempted to order food tonight. However, the pork chops are already thawed and my budget starts crying at the thought of eating out! As a perk, it's a one skillet meal!
