I haven’t posted in a while. Life gets so busy!! Ok. So besides continuing to meal plan for the 5 boys we have. My husband and I are shifting gears and started dieting about 10 days ago ish. My husband is lifting and running and sticking to a 2500 calorie day and I am doing a few things. I am doing a 1400 calorie per day diet, fasting and added 30 mins of “work out” per day. I am fasting 7 days per week 16:8. (16 hours fasting and 8 hours eating). I am down 5.5 pounds. My husband 1.5 pounds. (He is building muscle lifting so his weight loss will not be as aggressive). I am using 2 apps that help aid in the accountability and also using my Apple Watch to share with my friend to keep things interesting. It’s all mind over matter and accountability. We both want to lose 30 pounds. So I will be sharing tips that are successful for us here if anyone is interested. - as well as meal planning for my 5 growing boys. 🙂.

The meal below is how I break my morning fast. High protein. Bland and high fiber. All filling energy supporting foods with high nutritional value. Any questions please feel free to ask.

Delicious smoothie.

1 cup frozen pineapple

I’m really loving these one pan bakes. There is no true recipe here - I just threw some things together. Parchment paper is so helpful when trying not to use sprays, oils or butter.

My husband and I are trying to be weight conscious and heart healthy. So my base meal was to pin point that in hopes the kids would like it. So that is ;

Salmon with a marinade I made. (Lemon juice, Sriracha, vegetable broth and garlic). (NO BUTTER). I blanched the green beans prior to baking and boiled the the little potatoes. I made enough potatoes to also make the other dish you see.

The second dish is a potato skin bake. I took the little potstoes that were tender and pushed them all down with my thumb. Drizzled I can’t believe it’s not butter spread. Sprinkled with salt. Pepper. Chives and Parmesan cheese. Then sprinkled cheddar cheese and bacon. Then baked.

Not one left over. I will put the recipe to our dessert in the comments. It was a Nutella roll. Literally had 6 ingredients and took 15 mins to make. So easy. The kids loved it.

Are you having a hard time figuring out your weekly meals? So many to pick from or you don’t know where to look? You can always scroll here, Pinterest or Google. If you need a little help to chose your weekly menu; this is what I do.

We have a family of 7. So each meal selection is a majority rules choice. (I can’t please everyone). I make a soup for the week and always have lunch meat of something frozen to chose from, for the odd man out.

I usually consider 5/6 meals. (Dinner). I pick my types of meats/ fish I would like to buy and serve. If your a coupon clipper or sale finder - see what’s on sale FIRST. Example: this week I chose Salmon, Mahi Mahi, Shrimp, chicken, ground beef and Pasta dish. GREAT now I know what type of foods I am Serving. Now I just have to scroll recipes and find a recipe for each. (This helps if you have a printer). As I find my recipes I browse ingredients and make sure I have the majority of what I need to keep costs down. Then I print each recipe. - I go through and highlight what I will need to buy. I make my grocery list …. This sounds time consuming. - it’s really not terrible. You get a rhythm. Now doing this 4 plus months I am seeing savings of $150-$200 per week. Plus If you include take out. That’s nearly $600 per month. That’s $7200 per year. That is Huge. Think about it. Hope this helps.

Delicious cabbage and vegetable soup I added a little orzo and Wala delicious

This was my own recipe.

I sautéed - Onion, Garlic cloves and Carrots.

Added green beans, cut cabbage and green peppers.

Base was 4 cups of low sodium fat free beef broth and 1 table spoon of tomato paste to every 4 cups I used of them broth. (I made a big pot so I used 12 cups and 3 table spoons of tomato paste). I also like spice so I added a dash of hot sauce.

I boiled all ingredients for 15 minutes. Until all the vegetables were cooked. Last 5 minutes I added the zucchini. That cooks fast.

Salt and pepper to taste.

I cooked orzo separate and added after the soup was cold.
