Hot diggity I did it again! Another stellar concoction! Salmon with a special rub and panko crust. Drizzled with a lemon caper dill cream sauce! 🤤🤤🤤🤤

My favorite soup!!

Heres how I make it!
1.5- 2 lb ground hot Italian sausage
1.5 lb ground sirloin
Peel and slice 4-5 large carrots
Slice 4 stalks celery
Chop 1 large onion
Sauté all this in a big soup pot with some EVOO until meat done
Then add 1.5-2 tsp salt
Crushed rosemary, garlic powder, and thyme to taste

Then add
1 15 oz can diced tomatoes
2 undrained and 1 drained cans cannellini beans
1.5-2 boxes beef broth

Bring to a simmer and simmer until carrots are soft. Taste and add salt and seasoning as desired

Add in chopped kale and/or spinach to taste and simmer until soft

Boil separately a box of ditalini

Right before serving, turn off the heat and add 1-1.5 cups heavy cream and optional is to also stir in grated parm cheese to taste.

Serve soup over the ditalini

Tonight was my baked caprese ricotta chicken. Yum!

Yummy dinner! Mashed taters, broccoli, turkey meatballs of a random concoction, and a yummy sauce I threw together… very similar to my piccata sauce! So good!
