Channeling my northern Wisconsin roots and my southwestern vibes today! I'm whipping up an old-fashioned tatertot hotdish, but with a twist—using home-canned chili flavored pinto beans instead of green beans, Olathe sweet corn, adding some homemade salsa, and of course, loads of cheese and bacon!

And let’s be real, it isn’t a hot dish without cream of something soup, but I make mine homemade so I know exactly what's in it—no metal cans here! If you want the recipe, just let me know! 😋
