Slow Cooker Scalloped Potatoes

Ingredients

4–5 large potatoes, thinly sliced

1 ½ cups shredded cheddar cheese

1 cup shredded mozzarella or grated parmesan

1 ½ cups heavy cream

2 cloves garlic, minced

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon butter

Instructions

Lightly grease the inside of the slow cooker with butter.

Layer half of the sliced potatoes on the bottom. Sprinkle with half of the garlic, salt, pepper, cheddar, and mozzarella or parmesan.

Add the remaining potatoes on top and repeat with the rest of the seasonings and cheese.

Pour the heavy cream evenly over the layers, making sure it seeps down between the potatoes.

Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the potatoes are tender and the sauce is creamy and thick.

If desired, leave the lid slightly open for the last 20–30 minutes to thicken the sauce further. Let rest 10 minutes before serving.

Slow Cooker Creamy Ranch Beef Tortellini

Ingredients

1 lb ground beef

1 (20 oz) package cheese tortellini

1 (10.5 oz) can cream of mushroom soup

1 packet ranch seasoning mix

1 small onion, finely chopped

2 cups shredded mozzarella cheese

1 cup milk or half-and-half

Salt and black pepper

Fresh parsley, chopped

Instructions

Brown the ground beef in a skillet over medium heat, breaking it apart. Drain excess fat.

Add the beef to the slow cooker along with the cream of mushroom soup, ranch seasoning, chopped onion, and milk. Stir to combine.

Cover and cook on low for 3–4 hours so the flavors blend.

Stir in the tortellini, making sure they are coated in the creamy sauce.

Cover and cook on low for another 30–45 minutes, until the tortellini are tender.

Add shredded mozzarella and stir until melted and smooth.

Season with salt and black pepper, sprinkle with parsley, and serve.

Crockpot Lil’ Smokies with Beans and Potatoes

1 lb Lil’ Smokies
1 lb baby potatoes, halved
1 can green beans (or fresh if you like)
1 cup barbecue sauce
Salt and pepper

Put everything in a crockpot, and mix it together. Cook on low for about six hours. If you’re using canned green beans, wait until the last hour of cooking to add them in. This will prevent them from getting mushy. Fresh green beans can be mixed in at the beginning.

Onions ( optional )
1 bag mini gold potatoes
1 pkt Au-Jue gravy mix
1 pkt onion soup mix
1 cup beef broth
3 tblsp minced garlic
1/2 stick Kerry gold butter

Cook on high 5 hrs or low for 8hrs

1 packet lipton onion soup mix

Mix well
Cook on low 6-8 hrs
Or on high 3-4 hrs
