These brownies have quickly become a beloved treat in our home! Rich, fudgy, and secretly loaded with protein from the cottage cheese, they satisfy chocolate cravings while being a healthier option. The kids can't get enough!

Ingredients:

Wet ingredients (blend):
240 g low-fat cottage cheese
2 large eggs
1 tsp vanilla extract
60 g peanut butter (runny/soft)

Dry ingredients (bowl):
50 g unsweetened cocoa powder
70 g almond flour
100 g coconut sugar
2 g baking powder (1/2 tsp)
1 g fine sea salt (1/4 tsp)

Bloomed espresso (flavor boost – optional):
1-2 tsp instant espresso powder
1-2 tsp very hot water

Fold-ins:
90 g mini chocolate chips plus extra to sprinkle on top

Instructions:

1. Preheat your oven to 175°C (350°F) and grease an 20x20 cm baking pan or line it with parchment paper.
2. In a blender, combine the cottage cheese, eggs, vanilla extract, and peanut butter. Blend until smooth and creamy.

1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon poultry seasoning (or a mix of dried thyme and sage)
2 cups (about 60 g) loosely packed baby spinach, roughly chopped after measuring
8 large eggs
1 cup (240 g) cottage cheese (full-fat or low-fat work best)
½ cup (60 g) grated cheddar cheese
