Broccoli & Cheddar Crustless Quiche
This quiche is a cherished favorite in our household, blending the delightful richness of cheese with the nutritious crunch of broccoli. It's an ideal choice for breakfast or a light dinner, and the kids adore it just as much as I do!
Ingredients:
4 large eggs
1/2 cup milk
1 1/2 cups cottage cheese
1 1/2 cups broccoli florets (finely chopped, steamed for 2 minutes, then dried)
1 cup sharp cheddar cheese, shredded
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
Instructions:
1. Preheat your oven to 175°C (350°F) and lightly grease a 23 cm (9-inch) pie dish.
2. In a large bowl, whisk together the eggs, milk, and cottage cheese until smooth.
3. Gently fold in the steamed broccoli, shredded cheddar cheese, garlic powder, onion powder, salt, and pepper until well combined.
4. Pour the mixture into the prepared pie dish, spreading it out evenly.
5. Bake for 35–40 minutes, or until the quiche is set and lightly golden on top.
6. Allow it to cool for a few minutes before slicing and serving.
