Fresh Onion Soup with Cheese Croutons 🍲🧀
Preparation Time: 15 minutes
Cooking Time: 45 minutes
Servings: 3-4 🍽️
Ingredients:
🧅 2 large onions, thinly sliced
🥄 1 tablespoon olive oil
🧄 2 cloves garlic, minced
🧈 1/8 cup (2 tablespoons) unsalted butter
🍚 2 tablespoons all-purpose flour
🥩 4 cups beef or vegetable broth (store bought or homemade)
🧂 Salt and pepper, to taste
🌿 1/2 teaspoon dried thyme
🍃 1 bay leaf
For the Cheese Croutons:
🥖 1/2 baguette, sliced
🧀 1/2 cup grated Gruyère cheese (your choice)
Instructions:
Caramelize the Onions: In a large pot, heat olive oil and 1 tablespoon of butter over medium heat. Add the sliced onions and cook until caramelized and golden brown, stirring occasionally. This may take about 15-20 minutes. Stir in minced garlic and cook for an additional 2 minutes until fragrant.
Make Roux: Add the remaining butter to the pot and sprinkle flour over the onions. Stir continuously to create a roux, cooking for 3-5 minutes until it's golden brown. Gradually pour in the broth while stirring to avoid lumps. Season the soup with salt, pepper, thyme, and add the bay leaf. Bring the soup to a boil, then reduce the heat and let it simmer for 20-25 minutes.
Prepare Cheese Croutons: Preheat the broiler. Place baguette slices on a baking sheet and toast them under the broiler until lightly golden. Sprinkle each slice with grated Gruyère cheese and return to the broiler until the cheese is melted and bubbly.
Ladle the hot soup into bowls and top each serving with a few cheese croutons. Allow the cheese to melt into the soup, creating a delicious and gooey topping.
