🌶️🇨🇱 Authentic Texas-Style Beef Enchiladas 🇨🇱🌶️

🛒 Ingredients
For the Chili Gravy
• 3 tbsp vegetable oil
• 3 tbsp all-purpose flour
• 2 tbsp chili powder 🌶️
• 1 tsp paprika
• 1 tsp cumin
• ½ tsp garlic powder
• ½ tsp onion powder
• 2 cups beef broth 🥣
• Salt & black pepper to taste
For the Filling
• 1 lb ground beef 🥩
• ½ small onion, finely diced 🧅
• 1 tsp cumin
• ½ tsp chili powder
• Salt & pepper
For the Enchiladas
• 10–12 corn tortillas 🌽
• 2 cups shredded cheddar cheese 🧀
• 1 cup Monterey Jack cheese 🧀
• ½ cup diced onion (optional but very Tex-Mex!)
• Fresh cilantro for garnish 🌿

🔥 Instructions
1️⃣ Make the Texas Chili Gravy
In a skillet, heat oil over medium heat. Whisk in flour and cook 1–2 minutes until lightly golden. Stir in chili powder, paprika, cumin, garlic powder, and onion powder. Slowly whisk in beef broth until smooth. Simmer until thick and rich. Set aside.
2️⃣ Cook the Beef Filling
In another skillet, brown the ground beef with diced onion. Season with cumin, chili powder, salt, and pepper. Cook until flavorful and slightly crumbly. Drain excess grease if needed.
3️⃣ Warm the Tortillas
Quickly warm tortillas in a dry skillet or microwave so they’re soft and easy to roll.
4️⃣ Roll the Enchiladas
Add a spoonful of beef and a sprinkle of cheese to each tortilla. Roll tightly and place seam-side down in a lightly greased baking dish.
5️⃣ Sauce & Cheese
Pour the warm chili gravy generously over the enchiladas. Top with remaining shredded cheeses and a sprinkle of diced onion.
6️⃣ Bake to Perfection
Bake at 375°F (190°C) for 20–25 minutes until bubbly and cheesy.
