Home Canned Salsa
10 pound tomatoes, washed, cored, quartered and chopped
2 large onions, chopped
3-4 Green Peppers, chopped
6-8 Garlic Cloves, chopped (3 Tbsp. Minced Garlic
1 cup White Vinegar
1/3 cup Lemon Juice, from a bottle
3 tsp. Salt
2 tsp. Pepper
1 tsp. Red Pepper Flakes, optional, or fresh jalapeño peppers chopped
2 tsp. Chili Powder
2 tsp. Paprika
2 tsp. Cumin
2 tsp. Parsley
3 Tbsp. Sugar, optional
1. Clean and prepare jars.
2. Wash, quarter and chop tomatoes according to how you like your salsa, and place in a large pan.
3. Chop onion, green pepper and garlic, and add to chopped tomatoes, then stir well.
4. Add vinegar and lemon juice and stir to combine.
5. Add spices and stir well.
6. Cook on medium heat for 30-45 minutes or until boiled down to the desired consistency.
7. Ladle into clean jars, leaving 1 inch headspace in each jar.
8. Wipe rim of jars very well.
9. Heat lids in boiling water and place on jars. Then apply rings to finger tightness.
10. Place in canner and cover with water.
11. Bring to a boil for 35-40 minutes.
12. Remove from canner and allow to cool and seal.
