1. Tex Mex Chicken Salad
Serves: 4–6
Prep Time: 15 minutes
Ingredients
2 cups cooked chicken, cubed
1 cup black beans, drained and rinsed
1 cup corn
1 red bell pepper, diced
1 avocado, diced
¼ cup fresh cilantro, chopped
Dressing
2 tbsp lime juice
1 tbsp olive oil
1 tsp chili powder
Salt and pepper to taste
Instructions
Combine chicken, black beans, corn, bell pepper, avocado, and cilantro in a large bowl.
Whisk together lime juice, olive oil, chili powder, salt, and pepper.
Pour dressing over the salad.
Toss gently until combined.
Serve immediately or chill for 20 minutes.
Tip: Add crushed tortilla chips just before serving for extra crunch.
2. Asian Sesame Chicken Salad
Serves: 4–6
Prep Time: 15 minutes
Ingredients
2 cups cooked chicken, cubed
2 cups purple cabbage, shredded
1 cup shredded carrots
1 cup mandarin orange segments
¼ cup sliced almonds
3 green onions, sliced
Dressing
1 tbsp sesame oil
2 tbsp soy sauce
1 tbsp honey
1 tbsp rice vinegar
Instructions
Add cabbage, carrots, chicken, oranges, almonds, and green onions to a bowl.
Whisk dressing ingredients together.
Pour dressing over the salad.
Toss until evenly coated.
Chill for 15 minutes before serving.
Tip: Sprinkle extra almonds on top for added texture.
3. Greek Yogurt Chicken Salad
Serves: 4–6
Prep Time: 15 minutes
Ingredients
2 cups cooked chicken, cubed
1 cup cucumber, diced
1 cup cherry tomatoes, halved
½ cup Kalamata olives
½ cup feta crumbles
¼ cup red onion, thinly sliced
Dressing
½ cup plain Greek yogurt
2 tbsp lemon juice
1 tsp dried oregano
Salt and pepper to taste
Instructions
Combine chicken, cucumber, tomatoes, olives, feta, and red onion.
Mix yogurt, lemon juice, oregano, salt, and pepper.
Stir dressing into the salad.
Toss until coated.
Refrigerate for 20–30 minutes before serving.
Tip: Serve over romaine lettuce for a heartier meal.
4. Pineapple BBQ Chicken Salad
Serves: 4–6
Prep Time: 15 minutes
Ingredients
2 cups cooked chicken, cubed
1 cup pineapple chunks
1 cup black beans, drained and rinsed
2 cups shredded lettuce
¼ cup red onion, sliced
½ cup shredded cheddar cheese
Dressing
3 tbsp barbecue sauce
1 tbsp lime juice
Instructions
Place lettuce in a large bowl.
Add chicken, pineapple, black beans, onion, and cheddar cheese.
Mix barbecue sauce and lime juice.
Drizzle over the salad.
Toss lightly and serve.
Tip: Grilled chicken works especially well in this salad.
5. Lemon Dill Chicken Salad
Serves: 4–6
Prep Time: 15 minutes
Ingredients
2 cups cooked chicken, cubed
1 cup celery, diced
1 cup green grapes, halved
½ cup dried cranberries
¼ cup red onion, finely diced
2 tbsp fresh dill, chopped
Dressing
2 tbsp lemon juice
1 tbsp olive oil
1 tbsp Dijon mustard
Salt and pepper to taste
Instructions
Combine chicken, celery, grapes, cranberries, red onion, and dill in a bowl.
Whisk together lemon juice, olive oil, Dijon mustard, salt, and pepper.
Pour dressing over the salad.
Mix until evenly coated.
Chill for 30 minutes before serving.
Tip: This salad is excellent in sandwiches, wraps, or lettuce cups.
These five chicken salads are easy to make ahead and work well for lunches, picnics, potlucks, or light summer dinners.
