Trader Joe's Blueberry Muffins, Veganized!
This week on Trader Joe’s instagram they posted the most delicious looking photo of a blueberry muffin with a link to the recipe. I knew I had to make them after seeing the photo…but looking at the recipe which included 3 eggs, 2 sticks of butter, 2 cups of milk I wasn’t quite sure how they would turn out after I attempted to veganize them. But I went ahead and they turned out amazing: super moist, perfect sweetness to tart level, and juicy blueberries in every bite ☺ I even added vegan chocolate chips to a few, which were my favorite (you can never go wrong with chocolate in my opinion). Not to mention they are super easy to make!
My Secrets to Veganizing Recipes:
I always sub coconut oil for butter, use almond milk instead of cow’s milk, and to replace the 3 eggs I made 3 flax eggs (1 egg= 1 TBSP flaxseed meal + 3 TBSP water mixed together then put in fridge to thicken for at least 15 min.)

Trader Joe’s Vegan Blueberry Muffins
INGREDIENTS
Makes 12-15
• 4 cups All-Purpose Flour
• 6 teaspoons Baking Powder
• 1 teaspoon Sea Salt
• 1 cup brown sugar, plus more for sprinkling (optional)
• 3 flax eggs, beaten
• 2 cups almond milk
• 1 cup coconut oil, melted
• 1 teaspoon Vanilla Extract
• 2 cups Frozen Blueberries (do not thaw)
Optional: vegan chocolate chips
DIRECTIONS
Preheat oven to 425°F. Grease muffin tin with cooking spray or melted coconut oil; set aside. Prepare flax eggs. In a large bowl, mix flour, baking powder, salt and sugar; set aside.
In a large bowl, combine flax eggs, almond milk, coconut oil and vanilla. Add one-third of dry mixture to wet ingredients and stir to combine. Repeat addition of dry ingredients until fully incorporated. Gently fold in blueberries and chocolate chips if adding.
Scoop muffin batter into greased muffin pan (cups will be very full—almost overflowing—this is ok!). Lightly sprinkle muffin batter with sugar (optional). Place pan on center rack of oven and bake 22-25 minutes, until muffins are golden. Let cool 10 minutes, then gently remove muffins from tin. Enjoy warm!
