I haven’t been posting regularly 😔 and this picture has awful lighting but it was too damn good not to share This is the best thing I have made in a long time. I saw this on a reel today and I had to try it and let me say it was worth every mouth watering bite. 🤤 This is a small russet potato, smashed in a waffle iron, basted with cowboy butter until crispy and then topped with cheese. 🧀 I fried my chicken breast up in bacon fat (always save your fat, you just never know), placed it on top of the potato waffles, used my cowboy butter to make a cowboy mayo and drizzled that on top, sprinkled with bacon and chives. OMG I could eat this everyday! 😘

Potato waffles are a popular and savory treat in Ireland 🇮🇪, and me being the potato loving girlie that I am, had to try them for myself. These didn’t disappoint. I served them with chicken bites and a simple gravy, making them a little upgraded version of chicken and waffles. 🧇
