Pumpkin Cream Cheese Muffins

Ingredients

For the pumpkin muffins

• 1 (15-ounce) can pumpkin purée
• 1/4 cup vegetable oil
• 1/3 cup milk
• 2 large eggs
• 1 teaspoon vanilla bean paste or vanilla extract
• 1/2 cup granulated sugar
• 1/2 cup packed brown sugar
• 2 teaspoons pumpkin pie spice
• 1 teaspoon ground cinnamon
• 2 cups all-purpose flour
• 1/2 teaspoon baking powder
• 1/2 teaspoon baking soda

For the cream cheese filling

• 8 ounces cream cheese, softened
• 1/3 cup granulated sugar
• 1 large egg yolk
• 1 teaspoon vanilla extract

How to make it

1. Preheat your oven to 350°F. Line a 12-cup muffin pan with muffin liners.
2. In a large bowl, whisk together the pumpkin purée, oil, milk, eggs, vanilla, granulated sugar, and brown sugar until smooth.
3. Add the pumpkin pie spice, cinnamon, flour, baking powder, and baking soda. Stir gently just until combined. Do not overmix.
4. In a separate bowl, beat the softened cream cheese, sugar, egg yolk, and vanilla until smooth and creamy.
5. Fill each muffin liner about two-thirds full with the pumpkin muffin batter.

Ingredients

For the chocolate cake

• 2 cups all-purpose flour
• 1¾ cups granulated sugar
• ¾ cup unsweetened cocoa powder
• 2 teaspoons baking powder
• 1½ teaspoons baking soda
• ½ teaspoon salt
• 2 large eggs
• 1 cup buttermilk
• ½ cup vegetable oil
• 2 teaspoons vanilla extract
• 1 cup hot coffee or hot water

For the chocolate ganache

• 2 cups semi-sweet chocolate chips or chopped chocolate
• 1 cup heavy whipping cream
• 1 tablespoon unsalted butter

For the topping

• ½ cup chopped chocolate or chocolate shavings

How to make it

1. Preheat your oven to 350°F. Grease and flour two 8-inch round cake pans.
2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
3. Add the eggs, buttermilk, oil, and vanilla. Mix until smooth.
4. Slowly stir in the hot coffee or hot water. The batter will be thin—this is what helps make the chocolate cake incredibly moist.
5. Divide the batter between the prepared pans.

For the chocolate frosting:
• 1 cup (225 g) unsalted butter, softened
• 3 cups (360 g) powdered sugar
• ¾ cup (75 g) cocoa powder
• ½ cup (120 ml) heavy cream
• 1 tsp vanilla extract
• Pinch of salt

For the topping:
• 10 to 12 fresh strawberries
• Chocolate truffles
• White coconut truffles
• 1 cup (170 g) chocolate shavings

Instructions

1. Make the cake

• ½ cup (100 g) granulated sugar
• ½ cup (115 g) unsalted butter, softened
• 1 large egg yolk
• 1 tsp vanilla extract
• ¼ tsp salt

For the chocolate ganache:
• 10 oz (285 g) semisweet or dark chocolate, finely chopped
• 1 cup (240 ml) heavy cream
• 2 tbsp (28 g) unsalted butter
• 1 tsp vanilla extract
• Pinch of salt

For topping:
• 8 to 10 fresh strawberries
• 1 tbsp melted chocolate, optional

Instructions

1. Make the crust
Mix flour, cocoa powder, sugar, and salt. Add softened butter and mix until crumbly. Add egg yolk and vanilla. Mix until a soft dough forms.
2. Shape the crust
Press the dough evenly into a 9-inch tart pan with a removable bottom. Prick the bottom with a fork. Chill for 20 minutes.
3. Bake
Preheat oven to 350°F (175°C). Bake the crust for 18 to 20 minutes. Let it cool completely.
4. Make the ganache

• 2 large eggs
• ½ cup milk
• 1½ tsp vanilla extract
• 1½ tsp baking powder
• ¼ tsp salt

For the frosting:
• 1 cup unsalted butter, softened
• 4 cups powdered sugar
• 2 to 3 tbsp heavy cream or milk
• 1 tsp vanilla extract
• Green gel food coloring
• Pink gel food coloring

For the topping:
• 1½ cups crushed graham crackers
• Small white decorating icing or royal icing

Instructions

1. Heat oven to 350°F (175°C). Line a 12-cup muffin pan with cupcake liners.
2. Beat butter and sugar until light and fluffy. Add eggs one at a time, then add vanilla.
3. Mix flour, baking powder, and salt in a separate bowl.
4. Add the dry ingredients to the butter mixture, alternating with milk. Mix until smooth.
5. Divide the batter between the liners, filling each about ⅔ full.
6. Bake for 18 to 22 minutes. Cool completely.

14. Chill for 15 to 20 minutes before serving so the frosting holds its shape.

• 3 to 4 tbsp heavy cream or milk
• 2 tsp vanilla extract
• Pinch of salt

For decoration:
• Yellow gel food coloring
• Blue gel food coloring
• Brown gel food coloring
• Green gel food coloring
• Piping bags
• Large star or petal tips
• Small leaf tip

Instructions

1. Heat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
2. Beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
