Emme has officially launched her own little egg business to help save for summer camp, learn about entrepreneurship, and grow her savings account. Eggs are $5 a dozen (as we catch up a bit, our hens have been laying so many), and you can choose washed or unwashed. We’re happy to deliver locally, or you can swing by and pick some up.

She’s also working on a roadside stand that will be ready soon. These eggs come from pasture‑raised, organically fed hens—and I might be biased, but they’re truly the best around.

The secret is out. 🔒

The book I thought I was writing a year ago isn’t the book I have today. It morphed. It grew. It demanded to be more than just a collection of recipes.

I’m finally ready to introduce: ROOTED IN RED CLAY.

The roadmap is locked. 🔒

It’s January 5th, 2026, and Volume 1 of our homestead cookbook, Rooted in Red Clay, is officially in production mode.

For those who might have missed earlier posts, here is the quick overview of what we are building:

Rooted in Red Clay is a seasonal guide to the “New Southern Homestead.” It’s about blending my Midwestern roots and Czech heritage with the red clay soil of Georgia that we now call home. It’s a return to the “Old Ways” of cooking—prioritizing nutrient density, nose-to-tail butchery, real fats like lard and tallow, sourdough fermentation, and eating in strict rhythm with the seasons.

Right now, the garden is sleeping, which means it’s time to build the foundation. You can’t cook the rest of this book if the Larder is empty.

This week’s focus is on the essentials: rendering leaf lard for spring pastry crusts and keeping a continuous batch of Master Bone Stock simmering.

Once the Larder is stocked, we are moving straight into testing recipes for Chapter 6: Deep Winter. First up on the docket: Cornbread & Kimchi “Soup Beans.”
