We are a new, small homestead in northwest Alabama that specializes in gardening, freeze drying, canning, and self-sufficiency on a budget.

It’s a nice, rainy morning on the homestead. Halloween is done and we are ready to skip right over Thanksgiving and head right to Christmas. We have a ton to be thankful for this year, though. We’ve made progress in several areas around the house and in our general lives. God is looking out, you know? Our foster dog found his forever home. Both our homestead and Norm Hess have been growing with new followers and customers. We’ve made friends which isn’t super easy for adults. We love it. There is one thing we don’t love though. Our house itself is a little broken.

One thing after another.

Monday on the homestead, and we are due for a catch-up. It has been a quiet week on this page, but not a quiet week in the kitchen. The freeze dryer has been running, the garden beds are still on the to-do list, and Emily and I have a backlog of ideas we have not filmed yet.

So here is the deal: you pick what we film next. A taste test? A kitchen build-out? A garden update, mess and all?

Ramen night, (almost) from scratch.

Ajitama eggs are marinating, cabbage and carrots are cooking down for egg rolls, and the stock is on for the broth. Everything made from scratch... except the noodles. Those are instant and we are not ashamed.

What is your from-scratch comfort meal, the one that is worth every bit of the extra work?

So spicy 🌶️ the freeze dried jalapeños are out of the unit and ready for processing! I don’t have a hard set plan for what we’re gonna do for these and if I was braver, I’d just eat one right now, but I’m not a spicy girl. Freeze drying definitely amps up the flavor of the fresh ingredients you put in there so I’ll get Norm to eat one and let you know how it goes. :)

Happy Burger (Now Gmork) Day! We miss ya even though you’re in a better home! Fostering him was a journey for sure and we are glad God picked us to be your rest stop while your forever family got ready to bring you home. Thank you Heidi and Dom for choosing him and taking care of the not so lil guy.
