I had fun with you today learning something new Zack Hinson! Thank you for all you do for me, you have truly shown me what it's like to be loved and appreciated and taken care of. I can only hope and pray that we continue to better our lives. I'm very proud of you and I know you're proud of me. I hope Cash and Winnie are proud of their Mom too! Look out! I am FINALLY doing this thing and taking my welding classes this semester! Whoop whoop! Let's start this new chapter of life as a college student at Wilkes Community College!

Mountain Dew Jelly Recipe
Ingredients:
2 cups Mountain Dew soda
3 cups granulated sugar
1 box powdered fruit pectin (about 1.75 oz)
Green food coloring (optional)
Instructions:
Sterilize canning jars and lids in boiling water.
In a large saucepan, combine Mountain Dew and powdered fruit pectin. Stir until the pectin is dissolved.
Bring the mixture to a rolling boil over high heat, stirring constantly.
Add all the sugar at once, stirring to dissolve completely.
Return the mixture to a rolling boil and boil hard for 1 minute, stirring constantly.
Remove from heat and skim off any foam with a metal spoon.
If desired, stir in a few drops of green food coloring to achieve the desired color.
Ladle the hot jelly into hot sterilized jars, leaving 1/4-inch headspace.
Wipe jar rims clean and place lids on the jars.
Process the jars in a boiling water bath for 10 minutes (adjust the time for your altitude if necessary).
Remove the jars from the water bath and let them cool completely on a towel-lined countertop.
Check seals after 24 hours. The lids should not flex when the center is pressed.
Store the jelly in a cool, dark place for up to 1 year.

Nesta was in last week for her 9 week visit with us. She was so good for her exam and vaccines - just a little bit of sass. She’s cute, though, so that makes up for it! Nesta is on our awesome Puppy Wellness Plan so we’ll continue to watch her grow!
