Hamatcon I am an Israeli food junkie! I love cooking, I love baking, I love eating, I love sharing food tips and recipes. I'm in a relationship with my kitchen.

My inspiration comes from my mother and grandmother's Mediterranean style cooking. My influences are mostly Israeli and Middle Eastern. I was born in the Galilee area of Israel. These are the best mini rolled chocolate filled cookies AKA rogelach or “megulgalot” as we call them in Hebrew. I made these with leftover Purim Oznei Haman pastry and they are melt in your mouth delicious. Recipe for the same pastry is on my website hamatcon.com under Purim cookies! Enjoy!

I made my grandmother’s Moroccan fish for Shabbat…

there are no two home chefs that make this dish the same way! I don’t even make it the same every time. It depends on what I have in my fridge and who I am serving…

I remember my grandmother making this every Friday for Shabbat. She was observant and didn’t touch electricity so for lunch the next day she served it as a cold appetizer….wow this was the most incredible dish…I still remember using the challah to soak up the sauce from the plate…

Passover is coming to an end once again and I almost forgot to add this decadent but simple yearly treat I make. Matzah bark or matzah crack call it anything you like it’s the best part of the holiday desserts! But you don’t have to wait for Passover to make it….it is a great sweet touch at anytime… try it and I promise, you won’t stop eating it! And as we like to say every year at the end….next year in Jerusalem

The highlight of the passover table for me is Haroset! What is Haroset anyway?

It is a part of the Passover plate and I won’t go into the story here…so many different ways to make it depending on the cultural background and it is so delicious. Mine is my late grandmother’s which is middle eastern style made with dates, nuts and date syrup. After the first night I usually make date and nut balls out of it, so here is a combo video for both.

Here’s all you need:

For Haroset:
18 pitted Israeli Medjool dates (I get mine in M&S London)
1 cup of roasted hazelnuts
1 teaspoon cinnamon
2-3 tablespoon tablespoon Silan Date Syrup

For date balls (optional)
Half a cup cocoa powder

How to prepare:

Put all ingredients in a food processor. See if it is the consistency you like. Add extra Silan if you like a smoother texture. The Charoset should be not too coarse but not too smooth so it’s nice and thick, a little sticky and slightly crunchy.

That’s all there is to it!

If making date and nut balls use an ice-cream scoop or your hands to form small balls and dip into cocoa. Keep refrigerated in a storage food box for best results!

It’s not Passover without a matza ball soup…and mine is a classic one I’ve been making for years…
I do use Osem soup mix because well…. we all grew up on osem and it adds the best flavor so I’m not changing a tradition.

I like to use chicken drumsticks for richness, carrots and celery. My chicken matza ball soup is always a winner. Try it!
