How important are outdoor cooking and eating spaces to your lifestyle at home?

This gorgeous dining area at Acre Farms in Baja sure inspires me to level up my outdoor spaces!!

We entertain a lot outside, but sadly our indoor Kitchen is an entire floor up and not as convenient as we'd like it to be for a better in/out relationship. One goal to make up for it is to finally install a proper-albeit small-outdoor Kitchen soon! I've seen everything from grand estates with massive outdoor cooking/eating spaces to small 42"x6' balconies that have been perfectly designed for a small BBQ and cocktail with the sunset to juliette balconies with a table pushed up to them all used to sit, breathing in the fresh air, hosting and enjoying to their fullest.

Wherever around the globe we live, having access to a useful, inviting outdoor space can be good for the soul and provide an alternate dining experience, area for overflow when entertaining, or somewhere to crank up a bit of fire for those with indoor inductions. If you don't have private access, hopefully there are a great variety of friendly patios to share nearby!

It's time to sign up for your local CSA's! Community Supported Agriculture helps our local farmers, and supplies you with a fresh box of fruits, vegetables and sometimes also flowers on a regular basis.

Pre-paying for your produce helps farmers do their work with a small amount of assured income. The shop or market 'middle man' costs are also eliminated for better pricing.

To top it off, some farms have a variety of fruit or vegetables you can't find in your typical grocery store.

CSA's can also include meats and seafoods, or locally foraged mushrooms and spruce tips.

Specialty spaces require extra special attention to detail, like with this Filming Kitchen for an online cooking school in a hundreds-years-old stone outbuilding in Provence, France.

The final design will incorporate permanent lighting and filming cameras while keeping a residential feel so guests are comfortable staying here off-season. It'll also include a unique nod to the Owners other property - Julia Childs' old holiday home nearby.

I can't wait to see it finished!

This Kitchen added a modern touch to a beautifully classic home. While pops of color are abundant throughout the home, they're celebrated against a backdrop of neutrality.

The main Cook needed everything close at hand for his hours of prep (big Island) and cooking (one step away). Materiality was revealed (brick chimney) and complimented to meet each need - black fingerprint proof finish (easy to clean) with long, accessible pulls where most touched; brightening whites at less-used cabinets; and dirt-proof wood textured finish at least-used touch-latch cabinetry.

The result is high functioning, warmly inviting, beautiful Kitchen with plenty of storage, and one very happy home Cook!

LOVING these Mexican tiles found in Palm Springs!! Tile can bring bold colors, textures and personality to your Kitchen space.

In Mexico, hand made tiles are a way to bring the vibrant culture into the heart of the homes.

When using various patterns and colors together, it's often best to stick with 1-3 colors and a variety of patterns, or 1-3 patterns in a variety of colors. With these tiles, the first 3 rows OR the second 3 rows would work well as a theme, but all together (this was just a display) would be overly distracting.

I grew up with tile on almost every Kitchen surface - including the countertops - which even today is not uncommon in some countries. Where would you bring some character into the Kitchen through beautifully designed, hand made tiles?

Have you experienced a full, tableside Olive Oil tasting before? This restaurant with a gorgeous patio overlooking gardens, orchards and vineyards below in Gordes, France, starts every meal with one. And it's fabulous! Who knew Olive Oil could take on all these tasting notes? Grassy, spicy, bitterness, fruity, floral ... Then there is the mouthfeel, smoothness, richness, freshness, and how it tastes with and without the accompanying bread.

It's harder to do large tastings at home without a big budget, as Olive Oils can go rancid once opened after just 3 months and they rarely come in smaller sizes. Unless, I suppose, you consume a LOT of salads with vinaigrettes in that time! But try finding a knowledgeable merchant and bringing home two at a time and start exploring. Share your findings and favorites with dinner guests and create a conversation.

Olive Oils are as complex as wines, and have similar ceremonial tasting styles. A circular warming motion helps release the aromas in special tapered cups (typically in blue to avoid being led by your eyes) which allow aromas to focus. After breathing it in, take a sip (or SLURP), emulsifying it in your mouth. Contemplate it ... And go again.

Next time you're traveling to an Olive growing region, be on the lookout for grove/vineyard tours and/or tasting rooms - and build up your palate as you go!

Check out the coffee 'cherries' I picked when visiting Salento, Colombia in the 'coffee triangle'! We had a fantastic tour at where we were shown the entire process of coffee from harvesting cherries to filtering to sun drying to grinding and - VOILA - to our cup!

I love learning about favorite foods and ingredients 'at their origin' when I travel, and this was an opportunity not to miss. Three things I haven't forgotten from this tour :

1. Dark roast is often used to hide defective beans, while also losing complexity and flavor (which is why Finca Buenos Aires doesn't do it!)

2. Good coffee should come with a valve tab on the bag, which allows carbon dioxide out but doesn't let O2 (or any moisture from the air) in. Both CO2 and O2 (and moisture) are bad for those beans.

3. Drip, French Press and Pour Over are 3 common styles of preparing your morning brew. Each has it's own pro's and cons for resulting flavor, mouthfeel and intensity. After some taste testing and research, I'm drawn towards the Pour Over myself.

Now to find my favorite Colombian beans here in Canda and I'm all set!

Design Tip!

ASK your Design team for 3D!
Visualizing space from 2D drawings, CAD work, sketches and samples takes years of practice for most of us. Sketch Up drawings such as these ones are simple, easy and quick to do, and provide a lot of information on color blocking, materiality, layout, space efficiency and more even without too much detail. It's also a great conversational tool so that you and your Design team are all on the same page as you tweak and refine the 'small things'.

First blooms I watch for are the Forsythia in the backyard! They can bloom anywhere from late January to early March.

Once they're here, Forsythia are good for making syrups and plating food. They dehydrate fairly small for preserving, but I try anyways. With basil added, they're also subtly beautiful in laminated pasta and really cute in an herbed butter.

Now to wait ...
