After a very long time of not having a kitchen, not being able to share recipes. I can finally say, The Riley Kitchen will be back at the beginning of 2026!

Bringing all new breakfast, lunches, dinners, snacks and my personal favorites, Desserts!

Chicken Caesar Pasta

Total time: 40 mins

🌟 Recipe🌟

Ingredients:
24 oz tricolor spiral pasta
1 1/2 half pounds chicken (I used dark meat), cut into cubes
1 1/2 cups cut fresh asparagus, 1-inch pieces
3 green onions, chopped
15 cherry tomatoes, cut in half
3 stalks of celery, cut into small pieces
1 1/2 cups cut carrots
1 1/2 cups sliced mushrooms
2/3 cups + 3 Tbsp Caesar vinaigrette dressing
Parmesan cheese

Directions:
In a large skillet, saute the chicken in 3 Tbsp of Caesar vinaigrette until no longer pink. Add asparagus, green onion, tomatoes, celery, carrots, mushrooms and Caesar vinaigrette to the chicken. Cover and let simmer over medium-low heat, until heated through and vegetables are cooked. Meanwhile, cook pasta according to the package directions.
Add pasta to the chicken vegetable mixture, toss until fully combined. Top with Parmesan cheese.

When your daughter asks for pancakes for dinner, why not 🤷‍♀️

Total time: 30 mins

🌟 Recipe🌟

Ingredients:
3 cups all-purpose flour
7 tsp baking powder
2 Tble white sugar
2 1/2 cups milk
6 Tble butter, melted
2 large egg
2 tsp vanilla extract

Directions:
Combine flour, baking powder and sugar together in a large bowl. Make a well in the center and add milk and eggs; mix until smooth. Melt butter, add to pancake mixture with vanilla extract. Heat a griddle or pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake; cook until bubbles form throughout pancake. Flip and cook until browned on the other side. Repeat with remaining batter. Makes 16 pancakes.

Making leftovers into a whole new meal!

Marvelous Mediterranean Vegetables Linguine

🌟 Recipe🌟

Ingredients:
16oz Linguine
1 cup milk
1 cup heavy whipping cream
1 Tbsp oregano
Left over marvelous Mediterranean Vegetables

Directions:
Cook pasta according to the package directions. Meanwhile, pre-heat marvelous Mediterranean Vegetables. Drain pasta and pour back into the pot. Pour in milk, whipping cream and oregano. Stir until completely combined.
Serve vegetables over pasta.

The perfect grilled mixed vegetables for every meat entree! Super easy but full of flavor.

Marvelous Mediterranean Vegetables

Total time: 45 mins

🌟 Recipe🌟

Ingredients:
8oz sliced portobello mushrooms
1 sweet red pepper
1 medium zucchini
10 fresh asparagus spears, cut into 1" lengths
1 small yellow onion, sliced and separated
2 hand fulls of grape tomatoes
2 hand fulls of fresh snap peas
1 cup fresh broccoli florets
1 bottle (14oz) Greek vinaigrette
Optional:
1/2 cup pitted Greek olives
1/2 cup crumbled feta cheese

Directions:
Slice all vegetables that need to be cut. Place everything (minus feta cheese) into a large resealable plastic bag. Pour the vinaigrette into the bag; seal the bag and turn to coat. Refrigerate for at least 20 minutes.
(Optional: Drain the vegetables and discard marinade.)
Transfer vegetables to a grill wok, basket or foil bag. Grill over medium heat for 15-20 minutes.
Place on a serving plate; sprinkle with feta cheese.

Note: To make a foil bag; take a large sheet of foil, fold all four sides up about 2 inches. Place foil on a cutting board for easy transfer. Pour vegetables onto foil. Take a second large sheet of foil and cover vegetables. Fold sides down and pinch closed.
When grilling with a foil bag. Do not flip or stir vegetables. Grill on medium heat for 15-20 minutes.

Craving Mexican food? Don't want to go out? These enchiladas might be just what you need!

Beef, Bean and Cheese Enchiladas

Total time: 30 mins

🌟 Recipe🌟

Ingredients:
1 lbs ground beef
1 can (10oz) enchilada sauce
1 envelope Taco seasoning
1 Tbsp ground cumin
1 package (8.8oz) ready-to-serve Spanish rice
8 flour tortillas
1 can (15oz) refried beans
2 cups shredded Mexican cheese blend
Optional toppings: salsa, sliced avocado, shredded lettuce, taco sauce or sour cream

Directions:
In a large skillet, cook beef, taco seasoning and cumin over medium heat; heat through until no longer pink. Add half the can of enchilada sauce, and the full can of refried beans to beef.
Heat the Spanish rice according to package directions. Add rice and shredded cheese to the beef mixture. Stir until completely combined and heated through. Spoon beef mixture onto tortillas and roll to close. Sprinkle with cheese. Heat remaining enchilada sauce in microwave for 30 seconds. Pour over enchiladas. Serve.

For baked enchiladas: Follow directions above, stopping after rolling the enchiladas.
Preheat oven to 350°. Place enchiladas in a greased 9x11 pan. Pour remaining enchilada sauce and 1 cup cheese over enchiladas. Bake for 20 mins or until cheese is completely melted.

Shrimp Primavera

Total time: 45 mins

🌟 Recipe🌟

Ingredients:
1 Tbsp. extra-virgin olive oil
1 medium yellow onion, thinly sliced
1 red bell pepper, thinly sliced
1 cup halved cherry tomatoes
1 zucchini, cut into half-moons
1 yellow squash, cut into half-moons
2 cups fresh spinach
3 cloves garlic, minced
1 lb. fettuccine
2 cups half-and-half
1 tsp. dried oregano
1 lb. shrimp, peeled and deveined
1 cup shredded mozzarella cheese

Directions:
In a large skillet, saute shrimp in oil, minced garlic, onion and oregano. Meanwhile, bring a large pot of water to a boil to cook fettuccine. Once shrimp is cooked, add bell pepper, yellow squash, zucchini, cherry tomatoes and spinach. Cover and heat through over medium heat, stirring occasionally. Add half-and-half and mozzarella cheese, heating completely through and cheese is melted.
Drain pasta, pour into shrimp mixture. Toss until completely coated and combined. Serve and enjoy!

Found this recipe and wanted to try it. BUT... It was originally baked chicken. Since we don't have an oven yet, I decided to grill it instead!

Caramelized Grilled Chicken

Total Time: 1 hr 10 mins (minimum)

🌟 Recipe🌟

Ingredients:
3 pounds chicken breasts
2 tbsp olive oil
½ cup soy sauce
½ cup brown sugar
4 cloves garlic, minced
1 tsp grated ginger

Directions (for grilling):
Mix olive oil, soy sauce, brown sugar, garlic, and ginger in a bowl.
Marinate the chicken in the mixture for at least 30 minutes - 4 hours, flipping it occasionally.
Pull out a few sheets of foil. Wrap each breast individually. Grill over indirect heat until meat thermometer reads 165°, flipping it occasionally. Serve immediately.

Directions (for baking):
Preheat the oven to 375°F (190°C).
Mix olive oil, soy sauce, brown sugar, garlic, and ginger in a bowl.
Marinate the chicken in the mixture for at least 30 minutes - 4 hours, flipping it occasionally.
Place the chicken on a baking sheet and bake for 30-35 minutes or until golden brown.
While the chicken bakes, simmer the reserved marinade to create a glaze.
Brush the chicken with the glaze and bake for an additional 5 minutes.
Garnish with sesame seeds and green onions before serving.
