Fairy food fact: organic cauliflower pilaf with lentils and butternut squash. at about 115 cal/3.5 oz cooked. They are a RICH source of numerous essential nutrients, particularly dietary fiber and protein. They have the second highest ratio per calorie of any legume after soy beans. "Rice" your cauliflower, use non stick cooking spray to sauté some red onions. Add the cauliflower. And continue to brown the cauliflower. Use extra spray as needed. (Using a non stick skillet is key).While you were doing the sauté oven roast cubed butternut squash seasoned with a sprinkle of salt, pepper, nutmeg, and a little brown sugar blend. Prepare lentils according to package(use chicken or veggie broth for extra flavor) 1/2 head cauliflower- 1/2 cup lentils-1 cup squash then gets combined and sautéed in a large skillet adding 1 tbsp of olive oil. Season as needed with more of the above. Add garlic, ginger and a touch of thyme if you like! Serves 4. www.gourmetweigh.com
