Here's a simple and flavorful recipe for Veg Pulav using your mentioned ingredients:

Ingredients:

5 onions, thinly sliced

1 tomato, chopped

300g cauliflower, cut into small florets

1 potato, diced

150g peas

2 cups basmati rice, washed and soaked for 20 minutes

5-7 green chilies, slit

1 tablespoon ginger, finely chopped or paste

1 tablespoon garlic, finely chopped or paste

3 tablespoons oil/ghee

½ teaspoon turmeric powder

1 teaspoon red chili powder (optional)

Salt according to taste

Salt to taste

4 cups water

Instructions:

1. Prepare the base:
Heat oil/ghee in a large pot. Add cumin seeds, Sauté for 30 seconds until aromatic.

2. Cook the onions:
Add the sliced onions and cook on medium heat until golden brown. This step is crucial for flavor, so don’t rush it.

3. Add garlic, ginger, and green chilies:
Stir in the ginger, garlic, and green chilies. Sauté for 1-2 minutes until fragrant.

4. Add vegetables:
Toss in the cauliflower, potato, and peas. Sauté for 4-5 minutes on medium heat.

5. Tomato and spices:
Add the chopped tomato, turmeric powder, red chili powder (if using), and salt. Cook until the tomatoes are soft and the oil starts to separate.

6. Add rice:
Drain the soaked rice and gently mix it with the vegetable mixture. Sauté for 1-2 minutes to coat the rice with spices.

7. Cook the pulav:
Pour in 4 cups of water. Bring it to a boil, then reduce the heat to low, cover, and let it simmer for about 15-20 minutes, or until the rice is fully cooked and the water is absorbed.

8. Fluff and serve:
Once done, let it rest for 5 minutes, then gently fluff the pulav with a fork.

Serving:

Garnish with chopped coriander leaves (optional) and serve hot with raita, pickle, or papad.

Recently we made veg pasta at home and we had put following ingredients in it

1.5-7 garlic cloves and chop them fine

2.1-2 onion finely chopped

3. 2-3 tomato puree

4. 1-2 capsicum

5.2-3 Green chilli finely chopped

6. 4 tsp vinegar

7. 2 tsp pizza pasta sauce

8. Salt, blackpepper and redchilli powder and coriander powder according to your taste

9. 1-2 tsp fresh cream or malai

10. 3 tsp oil

11. 2 bowl pasta

You can add more ingredients according to your choice

How to make it

Firstly take sauce pan or kadhai and add 3 tsp oil and let it heat , when oil is warm put garlic that was roughly chopped then add chopped onion to it and saute it till onion gets pink and then tomato puree and mix it well , then add chopped capsicum and green chilli and saute and add red chilli powder, coriander powder , salt and black pepper according to your taste andthen add 4 tsp vinegar and 2-3 tsp pizza pasta sauce and mix it well and then boil pasta when pasta is boiled completly add it to above masala and mix it properly ,when pasta is mixed completly add 1-2 tsp cream or malai and mix it well

Pasta is ready , serve it with sauce of your choice
