Love borage! Great companion plant for any vegie patch, and edible in its own right too! Can't get better than that! 😍
Borage (Borago officinalis) is often grown as a bee attracting ornamental. Borage honey is very lightly fragrant.
However, borage leaves can be added to soups and in Germany, borage is made into a pesto, known as 'green sauce'. In Italy, borage is traditionally used to fill ravioli and pansoti.
In the UK, borage leaves are sometimes used, just like dill, for adding to the flavour of pickled onions. I grew up with borage in our kitchen garden. My grandmother allowed borage to self-seed amongst the bearded iris.
In the Australian subtropics, borage seed can be scattered now to flower in spring. No fuss, ordinary soil, a little water to help them germinate and grow. Easy! :)
