Desert Lime, Lemon Myrtle Meringue Tart :flatbread:

Desert lime (aka. Outback Lime), or 'Citrus glauca', is a popular citrus closely related to conventional citrus species that has grown in the wild for thousands of years.

Easy to grow, it is tolerant of heat, frost, drought and salinity.

Use the fruit to make cordials, sauces, marmalades, pickles and chutneys. Traditional Owners ate straight of the tree but, in my experience, it is difficult to simultaneously eat desert limes and smile!

The desert lime's distinctive piquant lime flavour and refreshing taste means that it can be used in any context that a standard lime or citrus fruit can be used. The mature ripe fruit or pulp are sold either fresh, frozen or pureed, and are used in a wide variety of food and beverage products.

Finger Lime, Watermelon & Endive Salad Recipe (Vegan)

Invigorating, earthy and sharp citrus aromatic salad - all thanks to Finger Limes. Here's how you make it.

Ingredients

50g endives ( 1/1/2 or 2 endives)

¼ watermelon chopped and diced

200g Vegan Feta

50 grams radishes washed and cut into rings

30g chives washed and cut into rings

Black Pepper

Salt to taste

1 Finger Lime

Olive Oil

Method

1. Arrange the watermelon, radishes and endives on the serving plates. You can layer them according to how you want the whole presentation to appear.

2. Crumble the Vegan Feta on top.

3. Sprinkle some chives on top and season the salad with some black pepper and salt.

4.Pop out the Finger Lime vesicles in a separate bowl and mix with some Olive oil. Add this mixture on top of the salad and serve

It is an excellent variety with medium sized round fruit and a regular fruit set.

It produces heavy crop each season.

The fruit is mild with a subtle citrus flavor.

Cooler climates add more color to the fruit.

It is tall and vigorous plant with a fairly light canopy.
