s is being able to watch Nathan as he sharpens the chef knives with precision or works on his next creation. A tiny cottage with shop space less than four by four metres, it overflows with a medley of interesting stock of mostly knives. Hahndorf Knife Shop is a local family owned and operated business which includes Lyn and her son Nathan. Nathan has developed a great reputation with his handmade knives, restoration work and knife sharpening skills. He is now excited about adding his forged kitchen knives to the handmade range in store. Nathan particularly loves to work with Australian timbers, fossicking for the most unusual grains possible. Customers have been giving Nathan timbers like Karri, from places such as the demolished old Port Adelaide wool stores, or sending Jarrah from as far as Western Australia. He has been the recipient of beautiful 100 year old Ironwood from New South Wales some time ago that he uses on very special projects. It is amazing the support and encouragement Nathan has been given by local, national and international customers.

Two more carbon blue 2 steel knives in our latest shipment from Sakai Takayuki. But this time with burnt Oak handles.

These blades have been forged by Mr. Itsuo Doi, son of blacksmith Keijiro Doi, who have created some of Japans finest knives for 70 years. The quality is unmistakable when opening each box, with origami paper notes and other details.

Today we remember Malcolm Day. Malcolm & Coralie were the original owners of The Cutler’s Cottage, now known as Hahndorf Knife Shop. They sold their business to us in November 2010 after 11 years in Hahndorf. Our condolences to Coralie and the family during this very sad time.
