YACON! Also known as the Peruvian Ground Apple, the Yacon is a species of daisy from South America grown for its crisp, sweet tasting tuberous roots. Once the lush green shrub dies back, they’re ready to harvest. The tubers do not contain starch, so they can be eaten raw or added to salads, juices and smoothies. They can also be roasted like other root veggies. Our 16 year old daughter just made Yacon bread and Yacon jam! The bread is old fashioned delicious and the jam is lovely and sweet without being sugary. And if, like us, you have chickens - Yacon is a great treat that they’ll love too!
