Purslane (Portulaca oleracea) can be an annoying little w**d that loves to grow in pathways and cracks of paving and driveways. It is a succulent herb that grows flat on the ground and is another garden w**d that is edible and highly nutritious. ๐ŸŒฟ

Purslane is used as a green, leafy vegetable that can be eaten raw or cooked, but the whole plant is actually edible: flowers, leaves, stalks and seeds. It has a slightly sour or salty taste, similar to spinach and watercress and can be used in salads and sandwiches. The leaves and stems do contain oxalic acid at levels slightly above those of spinach, so it should be consumed in small quantities.

Purslane is a rich source of vitamin-C, and some B-complex vitamins as well as dietary minerals, such as iron, magnesium, calcium, potassium, and manganese.

Pretty impressive for a humble little w**d! ๐Ÿ’š
