HOT HONEY TEST KITCHEN

I was recently gifted (cursed) with some VERY hot chillies from at May's Permaculture at the Pub!

These are mature Pink Tiger chillies - when I cut into them, the oil emitted a spell that can only be described as pepper spray.

According to Google, the Pink Tiger chilli is a highly sought-after, stunning pepper variety originating from Italy. It is a crossbreed of the Bhut Jolokia (Ghost pepper) and Pimenta da Neyde.

It packs a massive punch, registering anywhere from 200,000 to over 1,000,000 Scoville Heat Units depending on growing conditions and plant variations.

We have created 3 jars:

1. A jar with 1 chilli
2. A jar with 2 chillies
3. A jar with 3 chillies

Who is game to try it? 👀

We are keeping the honey raw and using a natural fermentation method

Garlic planting tips! Why do we soak our garlic at prior to planting? For a few reasons..

It kick starts the germination process, with visible roots often forming like the ones in this reel in as little as 12 hours!

It confirms the viability of the clove. Roots are signs of life, and signs of life are great news when garlic takes up valuable real estate in your garden

We have also found from experience that it increases the pace of initial plant growth - the kick start it needs if you are planting that little bit late (as we are here).

Do you soak your garlic prior to planting?

Did you know shiitakes grow much LARGER than you think?

Why do we never see large sized shiitakes (like the one in picture 1) in supermarkets? (or anywhere for that matter).

This is because they need to FIT into small punnets for transportation and to sit on shelves. What you may not realise is that this benefits the supermarket. Small sized punnets attract a larger cost per kg so it makes sense for super markets to want smaller shiitakes and to tell you that they need to be small by not giving you the option to buy larger ones.

I can tell you from experience, these larger shiitakes are incredible. They're meaty, there is no detriment to flavour and they go further in the meal! We always wait and harvest them large!

If you want to get growing at home, use PBM5 at checkout with and grow huge shiitakes like me!

We also had a special guest with us - Industrial designer and mycology enthusiast from - Mycelia House is a cultivation system for growing and showcasing the beauty of oyster mushrooms in the home.

The design promotes a move towards more sustainable and localised food practices, an appreciation of the fungi kingdom, and a deeper connection with nature.

Sometimes the labels on our honey jars are imperfect - but trust me, it does not affect the flavour!

Whether they're wonky, off-centre, darker or lighter in parts - each logo is hand stamped with love by Lisa or I (if they're a bit off, it was most likely me).

Our bee hives are located on our property and they only forage locally across the Bardwell Valley and surrounds

Each harvest has a seasonal variation in taste, aroma, brightness, density and colour!

We have sold almost 100 jars of honey so far and there are no plans to slow down in the future!

Beekeeping is more than a hobby - it is a highly contagious obsession!
