These Lamb & Feta Sausage Rolls are anything but ordinary! 🐑✨

Juicy, flavour-packed lamb, salty feta, warm spices and fresh herbs wrapped in golden, flaky puff pastry then served with White Feather Smoked Tomato Relish for the perfect finish. 🤤

They’re seriously good for parties, lunchboxes, entertaining or just because you feel like making something delicious.

LAMB & FETA SAUSAGE ROLLS
500g Lamb Mince
150g Feta, crumbled
1 small Onion, grated
2 Garlic Cloves, minced
1 Egg
½ cup Panko Crumbs
2 tbsp Tomato Paste
1 tsp Ground Cumin
1 tsp Dried Oregano
½ tsp Smoked Paprika
½ tsp Ground Coriander
2 tbsp Parsley, finely chopped
½ tsp Sea Salt Flakes
½ tsp Cracked Black Pepper
3 sheets Puff Pastry, thawed
1 Egg, beaten, for brushing
Sesame Seeds

METHOD
1. Preheat oven to 200°C and line two baking trays.
2. Combine the lamb mince, feta, onion, garlic, egg, panko crumbs, tomato paste, cumin, oregano, paprika, coriander and parsley. Season with salt and pepper.
3. Cut each pastry sheet in half lengthways.
4. Divide the lamb mixture evenly between the pastry strips, forming it into long logs down the centre.
5. Brush one edge of the pastry with beaten egg, then roll the pastry over the filling, overlapping slightly. Place seam-side down.
6. Cut each roll into 3–4 pieces and place on the prepared trays.
7. Brush generously with beaten egg and sprinkle with sesame seeds.
8. Bake for 22–25 minutes, until the pastry is deeply golden and the lamb is cooked through.

GARLIC BUTTER GREEN BEANS WITH CRISPY BACON

INGREDIENTS
500g Green Beans, trimmed
200g Bacon, diced
50g Butter
4 Garlic Cloves, finely diced
½ tsp Onion Powder
¼ tsp Sea Salt Flakes
½ tsp Cracked Black Pepper
2 tbsp Parmesan, grated
1 tbsp Parsley, finely chopped
½ Lemon

METHOD
1. Bring a saucepan of water to the boil. Add the green beans and cook for 3 minutes. Drain well.
2. Meanwhile, cook the bacon in a large frying pan over medium-high heat until golden and crispy.
3. Reduce the heat to low and add the butter and garlic. Cook for 1 minute until fragrant.
4. Add the beans and onion powder. Toss for 2–3 minutes until coated in the garlic butter.
5. Season with salt and pepper, then transfer to a serving plate. sprinkle over Parmesan and parsley.
6. Finish with a sprinkle of parmesan, parsley and squeeze of lemon and serve immediately.

KINDER BUENO NO BAKE CHEESECAKE SLICE

BASE INGREDIENTS
250g Chocolate Biscuits
100g Butter, melted

CHEESECAKE INGREDIENTS
500g Cream Cheese, softened
100g Icing Sugar
300ml Thickened Cream
200g Kinder Bueno, finely chopped
1 tsp Vanilla Extract

TOPPING INGREDIENTS
150g Milk Chocolate
75ml Thickened Cream
16 Kinder Bueno Pieces

METHOD
1. Crush the biscuits into fine crumbs and combine with the melted butter. Press firmly into a lined 20cm square tin and refrigerate while preparing the filling.
2. Beat the cream cheese, icing sugar and vanilla until smooth. In a separate bowl, whip the cream to soft peaks, then gently fold it through the cream cheese mixture. Fold through the chopped Kinder Bueno.
3. Spread the cheesecake mixture evenly over the biscuit base and smooth the top. Refrigerate for at least 4–6 hours, or overnight.
4. To make the topping, heat the cream until hot but not boiling. Add the milk chocolate and leave for 2 minutes, then stir until smooth and glossy.
5. Pour the chocolate topping over the cheesecake and decorate with Kinder Bueno pieces. Refrigerate until completely set before slicing into 16 equal squares.

Crispy chicken + crunchy Caesar salad, all wrapped up in one seriously good tortilla! 🤤🌯

These Chicken Caesar Wraps are golden, crispy, loaded with shaved parmesan and tossed in my Caesar dressing. The perfect lunch, dinner or quick family favourite!

CHICKEN CAESAR WRAPS

INGREDIENTS
600g Chicken Tenderloins
80g Plain Flour
2 Eggs, beaten
120g Panko Crumbs
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Smoked Paprika
1 tsp Sea Salt Flakes
½ tsp Cracked Black Pepper
Oil Spray
2 Baby Cos Lettuce, roughly chopped
80g Parmesan, shaved
150g Gem In The Kitchen’s Caesar Dressing
4 large Flour Tortillas

METHOD
1. Combine the flour, garlic powder, onion powder, paprika, salt and pepper in a shallow bowl.
2. Dip each piece of chicken into the seasoned flour, then the beaten egg, and finally coat thoroughly in the panko breadcrumbs.
3. Arrange the chicken in the air fryer basket, spray generously with oil and air fry at 200°C for 12 minutes, turning halfway through, until golden and cooked through.
4. Meanwhile, combine the shredded lettuce, parmesan and Caesar dressing in a bowl and toss until well coated.
5. Divide the Caesar salad and crispy chicken between the tortillas, placing the filling down the centre of each.
6. Fold the bottom of each tortilla up over the filling, then roll tightly, leaving the top open so the chicken and Caesar filling are visible. Lightly toast the wraps in a dry frying pan, turning gently, until golden and crisp. Serve immediately.

CAESAR DRESSING

INGREDIENTS
1 Egg Yolk
2 Garlic Cloves, minced
2 tsp Dijon Mustard
2 Anchovy Fillets, finely chopped
1 tbsp Worcestershire Sauce
2 tbsp Lemon Juice
½ tsp Sea Salt Flakes
½ tsp Cracked Black Pepper
120ml Extra Virgin Olive Oil
40g Parmesan, finely grated

METHOD
1. Place the egg yolk, garlic, mustard, anchovies, Worcestershire sauce, lemon juice, salt and pepper in a bowl and whisk until well combined.
2. Gradually drizzle in the olive oil in a slow, steady stream, whisking continuously until the dressing is thick, glossy and emulsified. Whisk through the parmesan until smooth.
3. Taste and adjust the seasoning, adding a little extra lemon juice for brightness, Parmesan for saltiness or Worcestershire sauce for extra depth. If the dressing is too thick, whisk in 1–2 teaspoons of cold water until it reaches your desired consistency.

STICKY ASIAN CRISPY BEEF

INGREDIENTS
700g Beef (eye fillet, rump or sirloin), very thinly sliced
100g Cornflour
1 1/4 tsp Garlic Powder
3/4 tsp White Pepper
3/4 tsp Sea Salt Flakes
Vegetable Oil, for frying
Sesame Seeds, to serve
2 Spring Onions, finely sliced, to serve
Fried Rice, to serve

STICKY ASIAN SAUCE INGREDIENTS
80ml Soy Sauce
60ml Sweet Chilli Sauce
40ml Honey
2 tbsp Tomato Sauce
1 tbsp Rice W**e Vinegar
2 Garlic Cloves, minced
1 tsp Ginger, minced

METHOD
1. Toss the beef with cornflour, garlic powder, white pepper and salt until completely coated.
2. Heat vegetable oil in a large frying pan or wok over high heat.
3. Fry the beef in batches until deeply golden and crispy. Don’t overcrowd the pan.
4. Combine the soy sauce, sweet chilli sauce, honey, tomato sauce, rice vinegar, garlic and ginger.
5. Wipe out the pan and return it to medium-high heat. Add the sauce and simmer for 1–2 minutes until glossy.
6. Add the crispy beef and toss until completely coated in the sticky sauce.
7. Serve immediately sprinkled with sesame seeds, spring onion and fried rice.

VEGETARIAN EGG FRIED RICE

INGREDIENTS
4 cups Cooked Jasmine Rice, chilled
4 Eggs
1½ cups Frozen Peas
1 Onion, finely diced
2 tbsp Soy Sauce
1 tbsp Sesame Oil
3 Spring Onions, sliced

METHOD
1. Heat a large wok or frying pan over high heat.
2. Add a little oil and scramble the eggs until just cooked. Remove and set aside.
3. Add the onion and frozen peas. Stir-fry for 2–3 minutes.
4. Add the cold rice and toss over high heat until hot and well combined.
5. Add the soy sauce and sesame oil and toss to coat.
6. Return the scrambled egg to the pan and stir through.
7. Finish with the sliced spring onions.

There’s something about a proper French onion gravy that makes everything it touches better! 🤤🧅

Rich, glossy, packed with caramelised onions and full of flavour. This is the kind of gravy that deserves to be poured generously over sausages, mash, schnitzels or a juicy steak.

And the best part? It’s so much better than reaching for a packet! 🙌

FRENCH ONION GRAVY

INGREDIENTS
50g butter
3 large Onions, thinly sliced
2 Garlic Cloves, minced
2 tbsp Plain Flour
3 cups Beef Stock
1 tbsp Worcestershire Sauce
1 tsp Dijon Mustard
1 tsp Brown Sugar
1 tsp fresh Thyme Leaves
½ tsp Sea Salt Flakes
½ tsp Cracked Black Pepper

METHOD
1. Melt the butter in a large saucepan over medium heat.
2. Add the onions and cook for 15–20 minutes, stirring regularly, until deeply golden and caramelised.
3. Add the garlic and cook for 1 minute until fragrant.
4. Sprinkle over the flour and stir continuously for 1–2 minutes.
5. Gradually whisk in the beef stock until smooth.
6. Add Worcestershire sauce, mustard, brown sugar, thyme, salt and pepper.
7. Bring to a simmer and cook for 8–10 minutes, stirring occasionally, until thick and glossy.

TOFFEE APPLE CRUMBLE SLICE

BASE INGREDIENTS
375g Scotch Finger Biscuits

APPLE LAYER INGREDIENTS
4 Granny Smith Apples, peeled and diced
40g Butter
⅓ cup Brown Sugar
1 tsp Ground Cinnamon
1 tbsp Cornflour
1 tbsp Lemon Juice

CARAMEL TOFFEE INGREDIENTS
397g can Sweetened Condensed Milk
100g Butter
½ cup Brown Sugar
⅓ cup Golden Syrup
1 tsp Vanilla Extract

CRUMBLE INGREDIENTS
1 cup Rolled Oats
¾ cup Plain Flour
½ cup Brown Sugar
100g cold Butter, cubed
1 tsp Ground Cinnamon

METHOD
1. Preheat oven to 170°C. Line a 20cm × 30cm slice tin with baking paper.
2. Arrange the Scotch Finger biscuits in a single layer over the base of the prepared tin, placing them closely together. Trim biscuits as needed to fill any gaps.
3. Meanwhile, place apples, butter, brown sugar, cinnamon, cornflour and lemon juice in a saucepan. Cook for 5–7 minutes until the apples begin to soften and the mixture thickens slightly.
4. Spread the apples evenly over the Scotch Finger biscuit base.
5. For the caramel, combine condensed milk, butter, brown sugar, golden syrup and vanilla extract in a saucepan. Stir constantly over medium-low heat for approximately 6–8 minutes until thick and glossy.
6. Pour the caramel evenly over the apples.
7. For the crumble, combine oats, flour, brown sugar and cinnamon. Rub in the cold butter until coarse crumbs form.
8. Scatter the crumble evenly over the caramel.
9. Bake for 30–35 minutes, until golden on top.
10. Cool completely before slicing. For the cleanest slices, refrigerate for at least 2 hours before cutting.
