I’ve been on a bit of a sourdough kick lately and this cinnamon raisin loaf might be my favourite so far.

I open bake on steel all the time. The heat from the steel is consistent, making it simple to get that perfect oven spring and crust.

Pro tip: preheat your steel for at least 45–60 minutes before baking! It makes a big difference in oven spring.

Meet the Average Joe. One of our most popular steels. This steel is 15lbs, making it lighter than The Pro and The Middle Man. The finger holes and manageable weight make it easy to handle! At 14” x 16” and built with durable 1/4” steel, it’s perfect for your oven, stovetop, or BBQ.

This steel helps you get that restaurant-quality pizza right at home. But don’t just take our word for it:

"Yes you should buy one! Restaurant quality pizza in a home oven! Highly recommend the product and the customer service from Atlas Steel Co." — Bill
