I am so grateful to finally be able to work again after almost two years without the ability to do much. Concussions are no joke! I’m also so grateful to be pursuing my dream of promoting local sustainable food and tithing back to our community. This year I put in a 2700sqft veggie garden for a local fly fishing lodge! For its first year in production it did amazing!

**Good Sprouts vs Bad Sprouts**

When your potatoes start to sprout, it's a sign they're gearing up for spring planting. You can delay sprouting until July by storing potatoes at around 1.5 - 2 degrees Celsius, but for most gardeners and farmers, keeping potatoes cool enough for long enough can be a challenge.

To ensure healthy sprouts on your seed potatoes, here's what you can do in the weeks or months leading up to planting. If your potatoes do sprout early, don't panic even if you don’t want to do any of the presprouting steps listed below.. Unless your potatoes have been growing sprouts all winter long in the basement, potatoes will still produce after they have pushed out one flush of sprouts 3"-6" long. It is far from ideal, but possible. The sprouts which don't break off will likely not survive the planting, yet your potatoes should push out new shoots.

Ideally, once your potatoes begin to sprout, transfer them to a well-lit area, though not necessarily in direct sunlight. We sprout ours in crates in our greenhouse, but an east-facing window works well too. Maintain a temperature of around 18 degrees Celsius for 4-6 weeks to develop a strong rosette of leaves rather than a long, white stem. Not only does this create healthier tubers, but it can also shorten the time to harvest by 7-10 days. The goal is to form strong short green clumps of leaves and growth.

If you've missed the start of sprout development, simply knock off those long sprouts. Once you place them in your sprouting area, if they can, they'll send out new growth, producing a nice, small, dense green cluster of leaves.

On our farm, we aim for our earliest planting of potatoes around early May, between the 5th and 10th. To hit this target, we transfer our potatoes into the shaded corners of our greenhouse to begin sprouting around mid-March. We use crates that hold around 20 pounds, layering them 2-3 potatoes deep. To ensure even sprouting, we mix up the bins every couple of days to prevent potatoes from being left in dark spots. Our greenhouse temp does drop to 12 degrees Celsius at night and can warm to 30 during the day. Not perfect, but it works.
