Production knife orders are now open at NordquistDesigns.com!

Three blade styles are available in this batch: gyuto, harpoon point chef, and nakiri. Only six of each blade style are available. Orders are estimated to ship the first week in December, 2025.

I am now offering the option to make 4 equal payments (no fees or interest) over the approx. 7-8 weeks it will take to complete these blades. On the product page, select the Four (4) Payments option and complete checkout. I will send 3 invoices for the remaining payments to the email on the original order. All 4 payments must be completed before the blade will ship.

Saturday’s Limited Knife drop features four harpoon point chefs. Each one has been custom cerekoted by my friend Josh and engraved 2025, 1/1. Josh’s artistry really shines through on these blades! Inspired by my Limited Production Series Knives, these knives have the same carbon fibre impregnated 3D printed handle and friction fit saya, colour matched to each unique blade.

Three Limited Knives and a five of each spatula style are now in stock at NordquistDesigns.com!

Each of the three blades in this drop has a machined starburst S-grind blade with a matching starburst pattern insert. Both the harpoon point chef and the nakiri’s blades share the same dark gunmetal finish and sculpted handles. The handles are both sculpted from stabilized Chechen burl and resin— opaque black on the nakiri, and translucent on the chef, revealing the unique live edge of the burl!

I went a different direction with the gyuto, choosing a bright satin finish for the blade and wa style handle. The handle is shaped from a block of stabilized Tasmanian Blackwood and rich Macassar Ebony. The grain in the timber is spectacular with a tight figure throughout and lovely contrast between the heart and sap wood!

These two chef’s are now available at NordquistDesigns.com!

Today’s Limited Knife drop brings a pair of harpoon point chef’s. Both knives feature 52100 carbon steel blades with my milled starburst S-grind and a sculpted handle.

One chef’s handle is made from highly figured stabilized Chechen burl and cast resin. On the underside of the handle, the resin reveals the burl’s live edge and highlights all of its natural variation. The handle is finished with a milled brass insert mirroring the starburst pattern of the blade.

The other chef’s handle is sculpted from stabilized figured walnut and cast resin. The natural grain pattern of the walnut radiates towards the live edge captured by the resin. Finishing off the handle is a milled copper insert, bringing out the rich, warm tones in the walnut.

Two harpoon point chefs are now in-stock at NordquistDesigns.com!

Limited Knife drops are back with two new harpoon point chefs! Both knives feature 52100 carbon steel blades with my milled starburst S-grind and a sculpted handle with a milled starburst insert.

One chef’s handle is made from highly figured stabilized buckeye burl surrounding cast resin. Looking into the resin reveals a world of streams underneath the rapids on the surface. The handle is finished with an ebony insert mirroring the milled starburst pattern on the gun-metal-finished blade.

The other chef’s handle is sculpted from stabilized ash burl and cast resin. After shaping the handle to the final size, a small piece of burl remained suspended in the resin. Instead of changing the handle’s proportions and grinding it away, I decided to leave the burl as a nod to the ocean theme the handle invokes.

Fish Spatulas are now available at NordquistDesigns.com!

The long-awaited fish spatula is here! I’ve spent the past couple of months designing two new versions of my fish spatulas: a large and a three-quarter-sized version. Both spatulas share the same brass handle, which is similar in size and proportion to my Small Offset Spatula. It’s textured on both sides for a comfortable grip.

The blade is made from the same carbon spring steel as my other spatulas but is twice the thickness (0.75mm / 0.030”) to maintain rigidity despite the slotted design. The blade tip is ground thin enough to slide under whatever happens to be in your pan, whether it’s fish or cookies!

The same M3-0.5 screws used in my other spatulas secure the blade to the handle, making for easy blade replacements if needed. The blade is etched to force a patina and then lightly brushed, creating a great base for the patina to develop with use.

Both Large and Small Fish spatulas are available in right and left-handed versions. The right-handed version is pictured. The left-handed version would have the blades slanting the opposite way.
