With my Canada Red rhubarb not doing very well (embarrassing when a Master Gardener can't grow rhubarb) we dug some of the worst ones out and I now have a space for extra plants I grew that didn't have a home.

A fairly heavy rain this afternoon making all our gardens lush and green... and probably more weeds to sprout!

Need a dessert for the weekend ... here is my recipe for Rhubarb Cake.
Nancy’s Rhubarb Cake

Ingredients

1 cup white sugar ½ cup brown sugar
1 tsp baking soda ¼ cup melted butter
½ tsp salt ¼ cup all-purpose flour
2 cup all-purpose flour ½ cup rolled oats
2 eggs, beaten ½ tsp ground cinnamon (optional)
1 cup Vanilla Yoghurt
3 cup diced rhubarb

Preheat the oven to 350F (175 degrees C). Grease & lightly dust with flour a 9x13” baking dish.
In a large bowl, stir together 1 cup of sugar, baking soda, salt and 2 cups flour. Stir in the eggs, yoghurt until smooth like cake batter (may need a little milk if too thick), and then fold in the rhubarb. Pour into the prepared dish and spread evenly.
In a smaller bowl, stir together the remaining ingredients – mixture should be crumbly. Sprinkle mixture evenly on the top of the cake.
Bake in the preheated oven for approx 45 min - until a toothpick inserted in the centre comes out clean.
Delicious served warm or cold with vanilla ice cream and a drizzle of pure maple syrup.
