Vegan Parsley Pesto:
2/3 c roasted almonds (roast your raw ones by putting them in the oven for 12 minutes)
3 cloves garlic
2 c packed parsley leaves (I used Italian flat-leaf parsely, but any type would do)
1 c olive oil
1/2 tsp salt
1/2 tsp red pepper flakes
2/3 c nutritional yeast flakes.
In food processor, finely chop garlic, then add almonds and chop until crumbly. Add parsley and olive oil, then add salt and pepper flakes while processor is spinning. Serve on a beet cracker for that holiday look. :)
