Look who just woke up!? 🐰 I guess you could say The Garden of Vegan is starting to come alive again! I have been feeling very unmotivated this pre-garden season but I do have my seeds all spread out across my kitchen table so we’re about to get our hands and paws dirty over here!

We’re having veganic sweet potato wedges for supper tonight!! I babied these plants inside over winter and through this summer’s ā€œdroughtā€. I had no real clue what I was doing and I had attempted to grow sweet potatoes in the past and ended up with nothing bigger than my pinky finger. That is not the case this time around! I was happy to see lots of earthworms wiggling around and even munching on the taters. They did minimal damage compared to the essential benefits they bring.

Does anyone have any long term storage advice? I only dug up a few week’s worth but the ground will freeze soon and I’ll have to get them (and the beets) out of the ground first. 

If you’ve ever tried to make your own sweet potato fries and always find them mushy or soft, the secret is a cold water bath and corn starch!

The gardening season isn’t over until there’s a foot of snow on the ground! ā„ļø šŸ˜†

So much has happened and didn’t happen in the Garden of Vegan since my last post that I don’t even know where to vegin! It was a really rough year and way too dry! I didn’t want to risk running the well dry so I watered everything by hand and only when it made the most sense. Obviously the purple kale was a priority and with great kale plants comes great responsibility! It takes me about a full day to make about 2lbs of kale chips and they disappear in a fraction of that time.

Process:
Step 1. Cut and despine Kale.

Step 2. I soak the Kale leaves in a covered pale of water overnight and all the worms come to the top. They get to go home before I move on.
Step 3. I then drain and quickly rinse the kale again.
Step 4. I lay the kale out to dry in front of a small fan. The leaves need to be dry in order for the mix to stick to them.
Step 5. I generally keep my sink very clean but I clean my sink thoroughly and put the dry kale leaves in it.
Step 6. I mix up the ingredients for the chips and drizzle it over the kale in the sink.
Step 7. I massage the kale until mixed well.
Step 8. I start the long and painful process of dehydrating the leaves in the oven. This takes me about 4 hours to make all the chips I usually end up with.

Despite it being one of the driest Summers on record, I’ve still been pulling all kinds of food from the Garden of Vegan so far AND I refuse to give up on trying to keep what I can alive! I didn’t want to let the ā€œsoil dieā€ so I did my best to keep it as wet as I could without running the well dry. I have the garlic and potatoes curing in the shed and I couldn’t help but try some šŸ‘Œ I had more snap peas than I could eat which means I have all kinds of seeds for next year! Same goes for the asparagus. I was really hoping to get a watermelon but it’s not looking promising. Same goes for all the cabbage that I babied inside all Spring haha I might get a pumpkin or two and the sweet potatoes are still looking strong. The beets are a struggle bus because the soil has just been too dry for their liking. The season isn’t over yet and I have learned SO MUCH this year already! The goal was always to get rid of as much lawn as possible and so far we’re hitting our targets! It’s that time of year when I start cleaning the inside garden for a new project and it’s going to be more of a ā€œmissionā€ than a project this winter šŸ˜

I’ve started a second Garden of Rejects but this time, it’s with adopted plants that my sister didn’t want + a native Bee Balm bunch that I found hiding at the back of the property. It’s looking pretty haggard at the moment but I have no doubt it will spring back next year šŸ˜ I’m not sure what the blue flowered plant is though so if anyone has an ID, I would greatly appreciate it. I guess this will be a little welcome for the pollinators and hummingbirds next year. They were all over the Bee Balm and Buddleja this year. In fact, these last few days, the hummingbirds have been favouring the Buddleja over the feeders!

Fun fact! The last two gardens I dug were in the shape of triangles and both accidentally are pointing True North. Totally fluke! I’m just over here summoning the ETs šŸ‘½

They might be small but they’re mighty and they’re mine! This is my first time cooking with veganically grown garlic from my own backyard! I’m not sure what could be more exciting for a 40 year old bachelor? Maybe if the whole meal was? 🤣
