Good morning!
We hit the ground running after returning from our maritime vacation.
An excess of eggs, meant a few dozen pickled eggs, and 30 tomato plants full of ripe tomatoes!
So far hubby has made ketchup and V8 juice.
Today I am making spaghetti sauce!
It's an easy and delicious ( no peeling required ) recipe.
You can either freeze in freezer bags or can.
Here is the recipe, if you'd like to try it!
Roasted Tomato sauce recipe:
Ingredients
tomatoes
garlic
onion
olive oil
balsamic vinegar
salt and pepper
basil
oregano
Instructions
Halve your tomatoes and place them in a large roasting pan
Add garlic (I use a whole head, bruised and halved)
Add 1 medium onion, quartered
Sprinkle liberally with [sea] salt, pepper, drizzle with olive oil and balsamic vinegar. Don’t skimp on these.
Use your hands to toss. Roaste in the oven for 45 minutes or so at 400.
Transfer the tomatoes to a large bowl using a slotted spoon. Make sure to get all the tomatoes, onions, and garlic
Add a lot of oregano and basil (fresh or dried, to your taste)
Blend until smooth.
I have lots of green peppers, so will chop and add them as well.
Save the juice!!
It is delicious! I freeze it in a container. A great base for soup or add to cabbage rolls.
