Ribs & Corn

Very simple and easy super tender ribs and sweet corn.

Ingredients:

* 1 kg ribs
* 4 cloves garlic, minced
* 2 tsp paprika
* 2 tsp onion powder
* 2 tsp garlic powder
* 1 cup Mama Sita’s Barbecue marinade
* 3 pcs bay leaves, crushed
* 3-4 pcs sweet corn cut into 3
* salt and pepper to taste

Instructions:

* In a cooking pot, put ribs then add salt, pepper, garlic powder, onion powder, paprika, Mama Sita’s barbecue marinade, garlic and bay leaves. Turn the stove to medium heat and cover.
* When the sauce is absorbed and the ribs is very tender, add sweet corn. Mix then cover until corn is done.
* Serve and enjoy!

Bulalo

Bulalo is a tender beef shanks, bone marrow, vegetables, flavorful broth and good beef recipe to keep you warm in cold and rainy weather

Ingredients:

* 4 pcs beef shank
* 1 pc onion, sliced
* 4 cloves garlic, minced
* 1/2 sized ginger, sliced
* 1 pc lemongrass
* 2 pcs potato, cubed
* 2 pcs corn cut into 3
* 10-15 pcs green beans
* 1/2 cabbage
* 2 spring onions, cut into 1 inch
* 5 cups water
* 1 Knorr beef cube
* 3 tbsp patis or fish sauce
* salt and pepper to taste
* sprinkle of Maggi magic sarap (optional)

Instructions:

* In a large pot, combine beef shanks, water, salt and pepper. Bring to a boil for 30 minutes or until meat is tender. Scoop away the floating scums and oil from the water.
* Once the meat is soft, put in the lemongrass, ginger, onions, garlic and Knorr cube. Cover and bring to a boil.
* Add potatoes and corn.
* Season with fish sauce and add the cabbage, beans and spring onions.
* Serve and enjoy! �

Charlie Chan Pasta

Ingredients:

* 200 g chicken breast or thigh fillet cut into strips
* 1 tbsp soy sauce
* 1 tbsp cornstarch
* 500 grams spaghetti noodles ()
* 8 cups water
* 1 tbsp salt
* 3 tbsp oil
* ½ cup peanuts
* 1 medium onion chopped
* 3 tbsp garlic minced
* ½ cup mushrooms
* green onions cut into lengths for garnishing
SAUCE
* 1/2 cup chili paste and adjust to preference
* 1 cup oyster sauce
* 1 cup Char Siu sauce
* 4 tbsp peanut butter
* 1 tbsp soy sauce
* 1 tbsp sesame oil
* 2 tbsp brown sugar
* 1/2 cup pasta water

Instructions:

* In a bowl, combine the chicken, soy sauce and cornstarch. Mix well. Set aside until ready to use.
* Bring 8 cups of water into a rolling boil over high heat. Add salt. Add the spaghetti noodles and cook until almost al dente. Reserve ½ cup of the pasta water and discard the rest.
* In a bowl, mix all the ingredients for the sauce until well combined.
* In a wok or large pan, heat oil over medium heat. Add the peanuts and cook, stirring regularly until they turn golden brown. Remove the peanuts from the oil and transfer them in a bowl. Set it aside for later.
* In the same pan, sauté onions and garlic until soft and aromatic. Add the chicken pieces and stir-fry until cooked through and add the mushrooms and cook for half a minute.
* Add the sauce to the pan and stir until it combines.
* Add the cooked pasta and toss to cover it with sauce cook for a minute or two to let absorb the flavors of the sauce. Turn the heat off. Add back the roasted peanuts and sesame oil and toss again.
* Transfer to serving pan or plates. Garnish with chopped green onions.
* Serve and enjoy.

Thai Mango Salad

Ingredients:

* 1 large ripe mango, peeled and sliced into thin strips
* 1 green onion, finely chopped
* 1/4 red onion, sliced thinly
* 1/4 sweet bell red pepper, sliced thinly
* 1 cup fresh bean sprouts
* salt and pepper to taste
* 2 tbsps chopped fresh cilantro

Mango Salad Dressing:

* 2 tbsps sweet chili sauce
* 2 tbsps lemon juice and zest
* 1 tsp ginger, grated
* 1 pc garlic, minced
* 1 tbsp fish sauce

Instructions:

* In a large bowl, combine the mango, green onion, red onion, red bell pepper, bean sprouts, salt, pepper and cilantro.
* In a separate small bowl, put together sweet chili sauce, lemon juice and zest, ginger, garlic, and fish sauce until well mixed.
* Pour the dressing over the mango salad and toss gently to coat all the ingredients.
* Serve and enjoy.

Ampalaya Con Carne

Ingredients:

* 1 pc ampalaya
* 1/4 cup ground pork or beef
* 2 tbsp oil
* 1 pc onion, chopped
* 4 cloves garlic, minced
* 1 pc tomato, chopped
* 3 tbsp oyster sauce
* 3 tbsp Knorr liquid seasoning
* 2 tsp Maggi magic sarap
* salt and pepper to taste

Instructions:

* Slice ampalaya thinly and put it in a bowl with salt and water. Set aside.
* In a pan, heat oil. Once heated, sauté onion, garlic, and tomato until it softens.
* Add ground pork then season with salt, pepper, magic sarap, oyster sauce and liquid seasoning.
* Sauté meat until it turns brown.
* Remove water from ampalaya by using a strainer.
* Mix ampalaya with the cooked meat.
* Stir for 5 minutes or until ampalaya is soft.
* Serve and enjoy!

Chili Garlic Oil

Ingredients:

* 5 bulbs garlic, peeled
* 20-30 pcs chilies
* 1 cup oil
* 3 tbsp oyster sauce
* 1 tbsp sugar
* 2 tbsps vinegar
* salt and pepper

Instructions:

* In a food processor, place chilies and garlic and process until finely chopped. (You can also manually chop the garlic and chili)
* In a pan heat 1 cup of oil on medium heat and add the chili garlic mixture.
* Add salt, pepper, sugar and oyster sauce then stir. Increase heat to medium high and cook for 8-9 minutes; stirring often to ensure it doesn’t burn.
* Turn down the heat then add vinegar. Do not stir and let it boil.
* When it turns brown, turn off heat and let it cool down.
* Once cool, pour and store in clean jar. Refrigerate if not using within a few days.
* Serve it with your dumplings, siomai and any kinds of food you want.

Spanish Sardines Pasta

A super easy and delightful 20 minute recipe for Spanish sardines pasta.

Ingredients:

* 200g spaghetti noodles
* 1 can Family’s brand spanish style sardines or any brand
* 3 cloves garlic, minced
* 1 small onion, chopped
* 1 small tomato, diced
* 2 tbsp oil
* salt and pepper

Instructions:

* Boil spaghetti noodles as per package instructions.
* In a pan, heat oil.
* Sauté garlic, onions and tomatoes until tender.
* Pour in the Spanish Style Sardines, mash then mix.
* Add salt and pepper. Cook for at least 2 minutes.
* Add in the cooked spaghetti noodles then mix.
* Serve and enjoy!
